I would have thought that these would taste terrible, I might just have to try this.  So as long as you have some sort of airlock, the juice won't get moldy or nasty from just sitting around at room temp?

I have also heard about people making moonshine (which is probably a very different process, but I know little about alcohol in general) and having to do something to prevent or get rid of methanol.  Does anyone have a clue what I am talking about?  Is there no risk of producing methanol tainted booze with this method?

I think you're reasonably safe from contamination by bacteria and other fungi if you're adding your sugar and yeast straight into a store-bought container, which should be clean. Once your yeast have used up most of the oxygen and resort to fermentation, it's a very high CO2/low oxygen environment, which will prevent just about anything else from growing in there. Also, you use so much yeast to start the process that they will probably out-compete any other microorganisms that make their way in. But I'm sure there is some risk, which is why some large-scale brewers boil their mix and add sulfites. I also remember from another thread here that drinks with something like 14% alcohol by volume and higher will be contaminant-free by virtue of their alcohol content. It wouldn't be a bad idea, though, to refrigerate once it's done fermenting or maybe even to boil it for a few minutes if you're really concerned.

There's no risk of methanol poisoning using this method. The issue only arises when you're distilling your product. The methanol comes from pectin in the fruit juice, and is there before you even add the yeast; it's not produced by fermentation. When you distill, you'll concentrate this methanol along with the ethanol, since they both boil at low temperatures, although it's common practice to discard the first runs, which contain the most methanol. I'm pretty sure you could even drink an improperly distilled drink and be fine. I couldn't find a single news report of someone being harmed by a home-distilled drink. I'm fairly certain that the source of this methanol poisoning rumor comes from lazy rogue spirit makers who had used denatured alcohol, which is very cheap and contains harmful amounts of methanol along with ethanol, to boost the alcohol content of their products.

I may finally join the elite ranks of the inebriated.

I used the same yeast as KBG, and the cherry cider from Trader Joes that Alan has.
It took nine days and it was still bubbling a little, but very, very slowly.
It's marvelous. Tastes almost exactly like a fine red wine. I'd rate the alcohol content the same too, probably 10 ABV. Btw the ingredients for the cider is filtered water (sufficient to reconstitute), concentrated apple, cherry, plum, and pineapple juice, natural flavors, red grape skin extract (for color)

Things I would do different:
1)Somehow eliminate the yeasty taste. Perhaps adding less yeast? Would that even work or does it multiply in presence of delicious sugarfood? I don't know.
2)Put it in the fridge the day before I planned on drinking it. It seems so obvious now.

Yeast multiply before they run out of oxygen and start fermenting, so the amount you add does not equal the final amount of yeast you end up with. I don't know about those Highly Active baker's yeast packets, but the directions on my champagne yeast packets indicate that one packet is good for 5 gallons, so you only need 1/10 packet for a 2 qt jug of juice. Maybe even less. Yeast sales are a business, after all.

Folks in that thread have said that you show chill your brew for a few days to allow the yeast to settle before serving. I've seen siphoning off the top, and the use of paper filter on YooToob to deyeastify. No personal experiece on the matter (yet).

The wine yeast packets say they're good for 5 gallons, take several quart jars and fill them with boiling sugar water(it is good to add some teabags and lemon juice or something for nutrients). Split the yeast packet between your jars once they cool and wait 36-48hrs. One of the quart jars will start fermentation for 5gal+ of juice/must. You can keep your other yeast starters in the fridge for awhile. Yeast packets are pretty cheap, but you can get gallons and gallons of wine from one if you  plan ahead. I wouldn't recommend using bread yeast.

Well,I'm not going to say that it isn't a good buzz,it just makes you feel kinda hazy the next day:grin:Anybody that would like to donate some actual wine yeast to my cause feel free too.I can't get it any where around here because this is a dry county,and would love to have some yeast for actually making wine rather than bread:crazy:

i used bread yeast. the local carrier of wine yeast didn't have any stock. oh well. its better than nothing but i hear wine yeast makes better alcohol.

hate to be a noob, but when using a balloon as an airlock, should it be decently inflated? i've got a gallon of 100 percent apple i

started up on jan 6 with some red star cuvee, balloon seems kinda limp after adding a half cup of sugar a day or two ago. i did the same

with a gallon of apple in a carlo rossi jug with an airlock, haven't seen the inner piece of the airlock float up though.. just a bunch of

bubbles in the airlock water itself.

I'm not familiar with cuvee, but that seems kind of unusual to me from what I've read. Did you activate the yeast in sugar water before adding it to your juice? Mine took a couple of days before it really started to kick off some major bubble action, but 11 days seems like a bit much.

nope, i didn't activate in sugar water, i've got a bunch of packs so i'll probably start a batch that way today. i'm not extremely worried about the

two gallons i've got going now... they are bubbling pretty consistently, just not enough to show any action in the balloon/ airlock. man i can't

wait to try this stuff! :smile:

I saw pomegranate wine at the store last night "fermented with 100% pomegranate juice." I was like, "Screw that, I'll just make my own."
So I did.

Added all the sugar I had in my house (little less than a cup)
Special yeast compliments of ButtWizard



Groovy-
I don't know how much sugar the yeast needs so maybe the fact that you added your sugar only 2 days ago has some effect on it. I'd think the juice would be sugary enough, we just add more to get it more boozey

Btw, my first balloon was super inflated. I had to add a couple more pinhole size holes on it to keep it the inflation size of the pic above. 3 or 4 holes total.

walmart has some apple juice jugs for two bucks!! i don't think i'll be able to walk into my closet if i keep starting new batches lol
