That would be interesting but idk about Sriracha on hot wings. Never had Dave's either. Usually Frank's or Louisiana is what I go with.

Franks for hot wings all the way. Isn't that what the original hot wings used? At least that's what they say on the bottle.
Sriracha is better on stuff like noodle dishes, stir frys etc I think... stuff you want that red peppery hot sauce taste too.
Franks being vinegar based is better for certain dishes.
Dave's Insanity is just straight up hardcore heat, habenero extract in it. 80,000 scoville units.. a couple drops in a pot of chili and you are cooking with fire.
There is much hotter sauces out there.. but most of those are just excruciating pain. Dave's I find is a nice balance between HOT AS FUCK and still having good flavor.
Far as I know, Blair makes some of the hottest sauces around (they have one that is 357,000 scoville units) ... but they taste like shit.

My favorite was the Dat'l Do-It bottle, which uses carrots and Datil peppers. These come in a boxed set, around Christmas.
I like the sweeter ones, and make several batches a week.
I think the dry seasonings are what make a good home-made sauce.
Dried peppers, IMO, have the most natural sugar and flavor. When they're blended on a liquefying setting, they'll also thicken the sauce.
This, with Asian seasonings, is the idea behind red curries.
It sticks well to vegetables, which I ferment into kimchi, and I also put it in broths.

I make different types depending on what i have available, but mostly cayenne based. I got 11 seeds from a guy here a few years back & have grown out several generations since then. I also have cayenne seeds available if anyone wants some.
I have done basic hot sauce with cayenne, vinegar & salt. But i like to include a lil garlic & onion in the recipe, adds alot of flavor.
I make a bbq sauce with habenjeros, tomatoe paste & mangos. I smoke jalepenos & use those in various stuff, just used a pinch of those in potatoe salad which turned out nice last week.
The plants are flowering like crazy now because of the lesser daylight

I have this years batch going on now, great flavor. I used cayennes, salt, pepper corns, onion, garlic & vinegar. I will have to figure out packaging & postage, pm if you are interested still.
