I have programmable temperature and humidity control in my mini-greenhouse. I can crank the humidity up to 99% if required, and temperature past 38 degrees C. Can I get away with not pasteurizing the wheat straw? I don't have a good yard to make a giant straw heap and turn it for a week.

I had a really good discussion with John Holliday during a visit concerning the methods he encountered with paddy straw growers. I am very interested in growing them commercially here in southern California. I would respectfully say he knows what he is talking about. I will let you know how it goes.

I think by using humidity and temperature controller you will get good harvest. but i suggest to pateurize the wheat straw first, to pause growth periode of other contaminant.

I keep having slow and thin growth on wheat straw, while the addition of lime, bran, yeast extract and peptone won't help much, so I guess it needs to be composted to get good results.
On spent oyster substrate with some worm castings and grain I get dense mycelium growing three times as fast.

Sorry, I put the wrong word in my last post. Here it is corrected. I am planning to pasteurize the straw.

I think Mycelio has answered my question. I'm going to have to find a way to compost the wheat straw.

Are you sure you have your temperature correct? If it is not nitrogen rich it might not create enough heat by itself. You might have to supplement the heat at first until things get moving. That's what I am doing and it seems to be working. The composting process of course is to create more nitrogen for the fungus which creates more heat during the spawn run.

Oh i see,
My composting process take 6-7 days out door, the external temperature about 22 degrees C (at night) - 34 degrees C (at day bright).

No, I'm working on the lower end of the temperature scale, 22°C. Still, as all jars have the same temp, I see an advantage, if the straw is partially digested by something else.

I'm sure it will work without composting, we only have to find out how well.
Small scale hot composting is not impossible. A few weeks ago I filled a medium sized plant pot with agaricus substrate and placed it in a larger bucket with hay in between and on top. It got pretty hot, though it didn't reach 60°C and after two days the ammonia smell became unbearable. In the end I waited too long and some slime mold took over...

based on my experience, VV's micellium growth worst on non composting substrate. But you can prove it by your own guys.

I just found instructions for non-messy composting of straw mushroom substrate. It is in:
"Cultivation technology of paddy straw mushrooms"
O.O. Ahlawat and R.P. Tewari
On page 16:
"Alternatively the beds can be prepared with the help of boxes of 80cm x 80cm x 10cm and of 60cm x 40cm x 30cm size."
Tray culture, with built-in composting!
The paper is online, and may have been posted before. Can't seem to copy the full URL. But if you Google 'Cultivation technology of paddy straw mushrooms', the first match is a pdf of the paper.
