Agree with Brainiac, proper cooking, cooling and seasoning of the rice is the most important factor along with the freshest fish.

lol, perfect timing for this thread as I just started rolling my own. It's really not that hard.
here's some pics of what I rolled this Sunday. mostly California rolls but a few salmon and cukes. In total that was one cup of rice. The inside-out roll can be a little tricky, as my picks attest to.
The stuff you roll yourself most likely wont be as good as at a restaurant, but its a hell of a lot cheaper and that's what drove me to learn.

I recently sent the links I used as a guide, I'll find and post them.

One question I do have regards the nori. Should I spread the rice and fish on one particular side of the nori? (one side does seems to have more shine than the other, but one side does not seem to be stickier than the other)
last time I rolled I had some trouble keeping the end of the nori sheet from peeling away from the rest of the roll.

The most important part about sushi is the rice. Fish is secondary, in fact a large amount of sushi has no fish (at least rolled sushi, bowl sushi). Sushi is named for the rice used. If you can make the rice properly, then you have 99.9% of the task taken care of.
Also, freshness of the fish is NOT as important as thought by most people. In fact, most high end sushi bars/restaurants will not use fresh fish because fish tends to be loaded with bacteria and parasites. These bacteria and parasites can only be killed by freezing. Usually fish used in sushi bars has been frozen for at least 48 hours. I highly recommend doing the same unless you detox for parasites frequently.

Yupyup. Also, never purchase "sushi grade" fish. There is no such thing, its just marketing to charge you more.

Being "fresh" and having been "frozen" are two very different things. Freezing a crappy spoiled piece of fish will not make it fit for raw consumption based on your logic. I am aware that some of the best sushi places in the world utilize frozen fish but you fail to report the big difference: Their freezers go way below zero (liquid nitrogen) so in fact the fish is cryogenically frozen extremely quickly. Just freezing a piece of fish in a normal freezer will result in limp, soggy fish, since the freezing of the internal moisture in the fish creates large holes that later thaw and make the fish mushy and wet.
Morimoto's restaurant has one of these liquid nitrogen freezers, they're in the six figures.
The freshness of fish/shellfish is ALWAYS important (especially for the very reasons you stated) no matter what you are cooking. In fact I would say that about most everything...except kimchi. And although there is no officially grading something "sushi" in this country, most "sushi" fish are prepared seperatly and from specific parts of the fish. Shrimp for sushi, for example is almost always delicately butterflied, of even size and shape and precooked. These "sushi" items are usually only found in bigger Asian megamarts.
If a sushi place needs to freeze their fish then they're either ordering too much fish to cover themselves or they're not turning over enough tables to sell off their product. If it is ever frozen then they must lawfully state that on their menu, and the word "fresh" cannot be used to describe those particular menu items.

So if I go fishing, and catch a salmon, instead of slicing it up for sashimi on the spot, I should take it home and freeze it?
I think that if you go to a fishmonger in the morning, and ask them what was caught that day, generally it will be pretty fresh.
Never use fish from supermarket. It's been sitting there too long.
And if you want the best sushi rolling tips:
Wear food grade rubber/latex gloves and rub your hands with a little oil. It will stop rice sticking to you and make it easy to spread.
Also, if you're doing the rice on outside rolls, always wrap your roller with saran wrap/glad wrap/cling wrap first. It doesn't inhibit the rolling and saves a whole lot of mess.
Thats what we used to do at my sushi rest.

It sounds weird, but mango is really good in sushi. there's a place here that makes a mango, avocado and tuna roll with crushed up cashews in it. It's sweet, creamy, crunchy and fresh tasting.
