Frozen Mushroom Smoothies
    #9095716 - 10/18/08 12:32 PM (5 years, 9 months ago)

Hey there,
has anyone tried freezing fresh mushrooms then putting them in a non-dairy smoothie?  I know that most people don't like freezing mushrooms because thawing them turns them into a mushy mess.  However, their potency should be just as strong as fresh mushrooms right?  I know that drying them does substantially reduce their potency.  In freezing them, their potency is  preserved, it's just that they need to be consumed in some other palatable way.  If thawed mushy mushrooms are unpalatable texture wise, why not grind them up in a blender and mix them in with tasty highly acidic fruits to aid in absorption?  The only thing that should be avoided is milk or dairy products that tend to minimize the potency.

What do you think?

No; when frozen the sacs of water in the mushroom rupture, which is why the mushroom becomes pudding when thawed. When this happens all of the active ingredients are exposed to air. In this way they oxidize quite fast. Not to mention if you do this they will rot fairly quickly.

Yes, I know about the sacs of water rupturing.  However, if the still frozen mushrooms were taken immediately from the freezer and tossed into a blender and consumed the instant the blender stops, is there really a chance of air exposure an oxidation?

OMG isn't that the truth!  Never the less, smoothies by nature are kind of icky being a slurry of masticated vegetable matter. I'll give a shot next time and wear a blind fold to boot. :pirate:
