I want a really good cook book. Something that doesn't just give recipes but talks about the philosophy behind the preperation. I'm looking for something that would have a lot of traditional or even common dishes but done really well.
Oh man, I know exactly the kind of book you mean, and I have it, but I can't remember the title offhand. I'll have to look for it later.
Have you ever read the Moosewood cookbooks? I'd recommend just about all of them, except for the latest diet scam one by Molly Katzen and some bs doctor.
Edit: Silly me, I was referring to the Tassajara cookbook (original edition at least, I haven't seen the newer ones). Best cookbook ever.

Yes indeed, Mayfly it is a great food book, excellent description.
A good mushroom cookbook is, The Mushroom Feast by Jane Grigson.
