Cook books

I want a really good cook book. Something that doesn't just give recipes but talks about the philosophy behind the preperation. I'm looking for something that would have a lot of traditional or even common dishes but done really well.
Any suggestions?

Oh man, I know exactly the kind of book you mean, and I have it, but I can't remember the title offhand. I'll have to look for it later.
Have you ever read the Moosewood cookbooks? I'd recommend just about all of them, except for the latest diet scam one by Molly Katzen and some bs doctor.
Edit: Silly me, I was referring to the Tassajara cookbook (original edition at least, I haven't seen the newer ones). Best cookbook ever.

The one i use most are Joy of Cooking Le cordon bleu cooking and CIA Professional cooking text books I'm just hear for the food by A brown Foodtv.com

new york times cook book, it has alot of old school traditional home style recipes.
Moosewood cookbook, as well as the enchanted broccoli forest cookbook.
Silverpallet cookbook.
I don't even used books anymore, there are so many webjsites with tons of recipes, i just surf & then fly with what i decide upon.

The larousse gastronomique is a classic, too. Not so much a "cookbook" so much as a food book. The ultimate resource for everything.

Yes indeed, Mayfly it is a great food book, excellent description.
A good mushroom cookbook is, The Mushroom Feast by Jane Grigson.
