Well, we got the Elk steaks from my roommates Dad, who is apparently a scary person with a bow and arrow. they've been marinating for about 6 hours in a tasty little mix. I don't really know the quantities, but eyeball it until you think it's delicious.

Next it was time to start the cranberry apple glaze.

- 1 cup cooking sherry
- 3/4 stick of butter
- 1/2 cup Craisins
- 1/2 Brayburn apple
- brown sugar to taste (about 1/2 cup for us)



We're gonna let that simmer and start chopping up vegetables for the roasting pan.



Carrots, Asparagus, potato, sweet yellow onion, and a little fresh cilantro.

We laid everything out on a bed of nice fresh asparagus, and sprinkled with the other diced veggies and then ladled the cranberry/apple/sherry glaze over the top of it all. Add some salt and pepper, roast for 30 minutes @ 350



Finished product, with garlic mashed potatoes (and a Caesar salad I ate before pictures :smile:)

Tasted great. I would have maybe added a little more salt so it had more of a savory undertone, but still delicious. The cranberries picked up a TON of flavor from simmering so long with the apples (which dissolved into the carmel base) and sherry. Delicious.

I kept the elk warm in the oven while the mashed potatoes were made and salads were eaten. Since elk is a dry meat to begin with this lead to it being a little tougher than I was hoping, but with the pan gravy from braising to dip in as an "impromptu au-jus" it made for a delicious meat.

I would definitley recommend trying this recipe, it wasn't very expensive, and could be equally delicious with either Mutton or Venison.

what cut of elk was it? steaks dont need to be braised. thats like the worst thing you can do to a steak.

it was shoulder of elk or something like that, braising would definitely be the way to go though.

ahh 30 minutes cooking time.. so not really a braise as much as roasting with a liquid. braising is low and slow and is used to for tough cuts of meat to make them tender.

30 mins does sound a bit long for steak though, unless you were going for well-done? and with elk, i dont know why you would- anything past medium with lean game meats is just asking for charcoal.

It wasn't charcoal at all, we went for a mix of braise and roast because of how dry elk normally is, but because it was a more tender cut of meat. roasting it with a generous helping of sauces and seasonings made the meat flavorful and juicy so we could cook it well-done to avoid any bacterial growth that may have occured during aging.

the sauce sounds pretty nice though. one of the restaurants i used to work at we did elk ny strips (looks like what you got there) with a blackberry/cassis sauce. we'd flame-grill the steaks and serve with mashed potatoes and garlic green beans. simple, but delicious.

I was there and let me tell you this tasted like a 13 year old virgin. Sweet & tender. :borat:

But no really, the glaze was dank. It would go great with sweet game meat like rabbit, duck, or quail. There was also hot apple cider to go with. It was like being at a 5 star restaurant, sans the stuck up wait staff.

I love cilantro in salads, dressings, sauces, crude cut salsas, sandwiches & marinades. 

It's a wonderful herb, and fortunately for me we have heaps of the stuff goin' for
$0.15 - $0.25 a bunch at the ranch markets here in southern California. :yesnod:


Cilantro is a key ingredient in my gyoza/potsticker dipping sauces (can double as a salad dressing) that includes:
  • Soy Sauce or Teriyaki Sauce
  • Chives or Finely Sliced Red or Sweet Onion
  • Chili Garlic Sauce (or ground up fresh chilis, garlic, and vinegar)
  • Olive or Sesame Oil
  • Sesame Seeds
  • Fresh Ground Pepper


You'll also find it in the marinade for my Carne Asada (link).


PS.  Nice elk steaks there Ap! :thumbup:
If ya get some more, try a dry rub and grill 'em rare!
