Apple Bourbon & Red Wine Pork Loin.

I marinated this loin in some delicious apple bourbon & a splash of some apple vinegar and fresh rosemary. I rubbed each side, with some fresh leaves of thyme some crushed up dried greek oregonal fresh rosemary spriglets, some cracked white/black peppercorns, and some kosher salt. I seared it in some delicious olive oil & butter then hit it with a generous splash of aussie merlot.
I then laced a glass pan with some olive oil, put the loin in there, then heated up some butter/olive oil in a pan , added some sliced videlia onions, a but of garlic, salt/pepper, then added some diced red potato's I saved the eyeballs that were forming on the potato's for later.
I got them to sear a bit and cook just a wee bit, then deglaze them with some more aussie red, add them to the pan with the loin.
Then I melted some more butter, a bit more olive oil, a good amount of garlic, and those eye's from the red potato's, then I added some red wine vinegar, and some more rosemary/thyme and some minced chives, and some rubbed sage. I reduced that too make a delicious sauce with those potato eye's.
Then topped the loin with the reduction and in the oven it goes. I had it at 300º and I'm waiting for the center to get too about 170-180º. I just realized now that the potato's will probebly cook faster and be done before the loin, or maybe vice versa. So we'll see what happens.
I'll post some pics when it comes out of the oven.

I'm surprised you didn't roast it at a higher temperature.

I might also suggest roasting apples with the pork instead of potatoes and then mashing them afterwards.
