After smoking, I thought about this..
Shrooms grow on cow patties patties have a conic shape (ok domed perhaps)
Would it not make more since to make many adjacent cow pattie type piles of subrstrate in order to increase fruiting surface area??
You could case it just fine as well, not to mention eliminate side pinning.. fruiting chambers could be butter bowls with holes in the lids covered in micro pore tape.
Then when it came time to fruit you would take the lid off and wait for the shrooms!

When I'm just fruiting some cakes to get prints I pour the colonized grain in a bowl and cover it with tinfoil. After letting the cake colonize for a couple days I turn them over on to plastic plates cut to the size of the top of the bowl and put them on plastic glasses to hold them off the perlite.

I'm asuming that's what you're talking about. Works fine for me and no side pins

Try it!
My instinct tells me that mycelium does a pretty good job drawing nutrients from surfaces that aren't at the top; that's why 4" substrates can produce huge shrooms.
Side pinning should not be a problem, unless you're shooting light down into the sides of your containers.
A textured bulk substrate would be fun though
