Gods, I'm so jealous. This thread has been so great, and inspirational!!! Great information on growing, marketing, getting certified organic (which I want to do for my herbs too)
That's what I want to do, have my own little mushroom farm. I've been out of work for 10 months now, unemployment has run out and the idea of going back to work for someone else just turns my stomach.
My little mushies have been selling great at the farmers market, but at this point I'm lucky if I can raise 2.5 lbs a week (working on getting bigger.) Sold out one week before the market even officially opened.
Hubbie is so supportive, he's even been talking about ways to convert the garage into an entire fruiting room. Just yesterday, he added that the office would be make a great spawning area, and suggested a name for the mushroom business.

My mushroom Company is called Willamette Valley Mushrooms.
I am looking to expand also, I have a design idea for a pasteurizer/mixer/tube filler. I plan to start construction of it pretty soon after I figure out the details.

10 lbs.??? Damn man. That's honestly really good yields. It's been years since I did a count on how much individual bags produced, but I was averaging 5 lbs. of pink oysters per bag at the time, and I thought that was pretty good.
I guess that's the proof on how good commercial cultivars (strains) can actually be. Can someone do the math on the BE for me? I'm not too great at that...
wet weight of mushrooms divided by the dry weight of substrate?
220lbs / 200lbs straw?
Is that right? so it would be basically 100% BE?

Went into the local Asian grocery store last night, huge place. They have great produce ( but sell live Turtles, almost had a heart attack when I saw the poor turtles). The mushroom selection was, well, not so good. Their shitake's were dried and puny looking. Their king oysters dried looking, and nothing but freakin' stem, looked like the cap had even been cut off of some of them. Their oysters were slimy and horrific. Heck, I can hold some oysters in the fridge for a week, and have the looking much better than that!!!
The only other market I've seen carry oysters around here, well, they were slimy and disgusting. Would have hesitated to put 'em in my compost pile!!!
With all the restaurants too, there is definately a market around her (hubbie is already in sales so he can help there). I just have to get my growing volume up (and let the blisters on my hand heal from cutting hay up).
Now, see what you've gone and started, gotten us all dreaming about making our fortunes selling fungus.

Hey Mousekabob, I know exactly what you're saying about the quality of locally available mushrooms. Where I live, in Florida, most mushrooms are shipped from PA, over 1400 miles away. Then they move through distribution channels until they end up on the shelf in the grocer...lots of room for improvement.
Also to help get your productivity up, you need some tools. Some can be purchased and some can be innovatively designed. The people here are all about designing equipment to make the process more user-friendly.
To help with your hands - maybe one of these McCullogh chipper/shredders (I think mine was $200 delivered)
Here's a 55 gallon drum modified to be a hot water bath pasteurizer.
Notice the white hot water heater blankets wrapped around the drum and secured with bungee cords. Also a temperature to monitor the center temperature in real time. There's a tap drain at the Bottom to drain the whole thing when done.
Here's a bag filler that cost all of $15 or so to build
then you hoe for the best...
Also king oysters do tend to have really small caps and large stems. The stems are edible, so that's no big deal.
Here's a picture from a farm I visited a few years back.
They grow 1000lbs a day of king oysters (and a lot more of lots of other species too)

Shoulda explained better. The king oysters were in packages of about three, one would have a cap, one only a partial cap, and another no cap at all. It was just weird.
We picked up hubbies chainsaw from the repair shop, and I was drooling over a chipper/shredder they had. Guy dropped it off and never picked it up. Out of my current budget sadly. Been keeping an eye out on craigslist too, maybe pick up a freebie that needs a few repairs.
Also don't have a set up yet for boiling more than a few bags worth of straw at a time. (been tryin to do two every other day)
First, I have to get the space to hang more and larger bags. This would involve constructing a room inside the garage. Then providing humidity to it (humidifiers) and air exchange (fans) We actually figure we could use plastic lumber to build a frame, and cover it with heavy duty plastic. Or, perhaps purchase a small greenhouse and put that inside the garage. Again, this takes momey (vicious, vicious nasty money)
Right now I just have a very small area. Three shelves pushed together, draped with heavy plastic to make a room, with a humidifier, light and fan inside.
My spawning room is the cupboard over the refigerator (Hey, Harry Potter only got the one under the stairs) and there isn't much room in there for big bags either. Was using a closet in the hall, but found the mushies seemed to like above the fridge better. Guess it's warm and cozie up there.
My pasturazation system now consists of a big granite ware kettle. If we stuff it full of cut up straw, I can fill two of those filter type grow bags. (use a candy thermometer to check tempature) Been trying to do a set every other day, but haven't with this hand. Guess I'm gonna have to sucker the hubbie and kiddies into cutting up the straw for me.
We're working on expanding, but it's going to take time, sigh.

One problem Im having is mold growing on the wood 2x4's, is my humidity too high? what am I doing wrong? I was going to just paint all the wood...
