Can you talk to us a little about your approach to selling at restaurants? How did you approach the sale, how did you find the interested restaurants?

Basically, drove around to better places, with mushrooms and cards and a brochure I made about my company and oyster mushrooms. They were really impressed with everything. I offered a free sample, and then told them to call if they were interested in placing an order. I called them back too, to follow up. I explained that I had mushrooms growing right now, for a certain client, and that I would grow extra to make sure to meet that demand, and that any extra I could get over to them.
volume varies greatly. 5lbs for some supermarkets (small) and 10-20lbs for restaurants.

Cool! I really appreciate the data points. So did you call the restaurants first to set up appointments, or did you just go in during off hours (2-4PM) and hope for the best?
Also do they seem to care how you're packaging them? Are you doing 3-5 pound boxes, or clamshells?

Just Called up a restaurant that really loves my mushrooms. Just sold them 20lbs. 
Restaurants are best - you can get more per pound from them. Distributors always wanna rip you off.
Heres my take on the mushroom industry:
If you start out, grow 10 pounds, go around to some restaurants and see if they would buy, tell them you are thinking of starting a business growing mushrooms and explain that you are testing the market before you just up and spend 100k on equipment.
Next - contact produce distributors and see if they want them and how much are they interested in paying. Then if you think you can profit, setup shop. and sell to distributors mainly, then slowly start selling directly to restaurants and small health stores. They are the ones you will make most of your money from.
I bought plastic containers that have holes on the sides, they hold about 5 lbs. I sell any amount, just if they buy 5lbs I leave the basket with them and pick it up on re-order. (good reason to call them and ask them if you can get the baskets and if they want to re-order)
I've got two regular friges that can hold 40lbs each. I need to get a walk in fridge, but I dont have the capitol yet.

Based on the amount of mushrooms you have now all you need is a couple chest freezers set on low refrigeration setting, a walk in is a bit costly for you right now.
Gotta crawl before you walk but of course you know that.

JD About the packaging, I mean, when they don't buy an even five pounds, what do you do? What do they go in at that point? when they don't buy an even 5 pounds, I just leave them with them, no packaging.
