Difference in taste(chicken)

Is it just me, or is there a big difference in the taste of chicken meat depending on its source?
I can buy a big ole un-naturally large piece of Tyson breast meat and cook it the same way as a piece of breast meat from a local market and they will taste totally different!
Whats up with that?

The difference comes from what the chicken was fed. Some companies use strictly chicken feed, others will use corn or a different mix of grains. Same with beef. Cows that were fed corn/corn meal are a little sweeter then the alfalfa fed cows.

The feed and breed of chicken (or any animal). The best chickens in the world come from a region in France known as "Bresse" Chickens there are fed a strictly corn based diet and then allowed to roam free to feed on worms, grubs, etc. Very expensive and something like 90% of the chickens raised in Bresse are consumed in Paris, unfortunately they're not (officially) imported to the US.n In general, free range, organic meat is better (both for the consumer, farmer and enviroment) in taste, texture and appearance. Worth every penny in my book!

yes, look in the paper for free range chickens for sale. or maybe thats just around here haha. man they get so much bigger juicyier tenderer. you roast that up and youll forsurely get layed..

When the animal has a chance to run around, the muscles are actually being used and that gives flavor too.

If you REALLY want free range chickens, you'll have to research where the chickens were raised. The USDA defines free-range as "allowed access to the outdoors"

A farmer with no concience and just enough greed could simply lift a stack of cages on a wooden palate with a forklift and set them outside periodically. There are plenty of farmers who do it the right way, and plenty to do it the wrong way. Chefs I've worked with have tought me this, not to waste money on free-range chicken that really isn't free-range. You have to look a little beyond the USDA label, like those Bresse chickens soochi talked about. I bet those are spectacular.

Altron Brown discussed this in an episode of Good Eats. Gave some good information on "organic", "free range", etc. I'll see if I can dig that up.

Can't find which episode it was from. Best I can tell you is go over to mininova or some such site and search "Good Eats" then download any episode involving chicken. Hell, download all his shows.
Not very helpful, I know, but it's the best I can do. If I ever see the episode again I'll post it.

"Free Range" chickens are absolutely the only way to go. There is very little flavor in the supermarket variety of fowl. The taste differential is incredible as well once you have had both. In fact one of the most bland tasteless chickens you can buy is from K.F.C. the colonel's breading and secret spices shit is delicious, but the actual chicken meat itself almost has no taste. No one ever notices, because they are too bust enjoying the crispy fried skin and breading. If those poor fools only knew what they were missing out on. Ohh well, more power to the select few who can see the light on this issue. Although, personally I think that it is a shame how drummed down peoples taste's are these days, as well as how little most folks know about something should properly taste no matter what the food genre.

For the best chicken in north america (imo) Goto your local Amish/huderite(sp?) colony and ask for a box of chickens.
Out here it cost $80 for 10 gutted and frozen birds. Usually the gibblets are extra $. They still raise their livestock the good 'ole fassion way. Outside in free-runs in the summer being fed corn/wheat/rye mix. and inside in large free-runs with the same food.
While your there, pick up some watermelon wine for your meal. That stuff is the shit!

been going down to the local amish village monthly for one....also some GREAT fucking chesses

Totally agree, overhere in VA I drive about 40 minutes to a small town where some amish families raise chickens, a little more expensive, but the taste is incredible, even more so are the eggs that the chickens lay. Most people don't realize how much flavor really good eggs have.
