I know this is a stupid question but I was wondering exactly how to sautee onions. It's kinda hard to find something so simple on google. Could anyone explain it to me? I'm no chef.  :rolleyes:

It basically means just cook them in a frying pan until they turn a nice golden brown. Sauteeing (sp?) usually involves some kind of sauce, like a butter and/or garlic mixture. You can sautee meat in a cooking wine such as marsala, or stir fry vegetables in soy sauce or wok oil.

What recipe are you working with?

No recipe. I just like sauteed onions. :-D

So I could just bring a butter/veggy oil mixture to a simmer in a pan, slap on some onion slices, toss in some seasoning, then wait til they turn golden brown? I'm gonna go try that!

Dunno if you'd need butter and veg oil, that might be overkill. Plus, using oils is more frying than sauteeing. But yeah, you can just toss in a chunk of butter, let it melt, cook up some onion 'til it's nice and toasty colored, and chow! You can do that with nearly anything, bell peppers, mushrooms, garlic cloves, etc.

Holy shit that was good. Beats the hell out of any fried onion rings. I used a layer of olive oil with a tablespoon of butter, brought it to a mild simmer, placed some onion in it, then added some italian and garlic seasoning along with some other random seasonings. :-D I let them cook for a good 6 minutes stirring constantly. When done, I placed them on 2 layers of paper towel on top of a plate to absorb most the oil drippings. I ate them alone with my fingers and damn were they good!!!! If you've never tried this before, do it now!!!

Saute is a classical French culinary term which literally means "to jump" A classic saute is where food is cooked in a hot pan with little oil. And proteins at least are usually "dredged" in flour or some other kind of coating. Nowadays most people apply it to most every dry method on the range cooking where they should be more appropriately using terms such as "shallow fry" or "Pan roasted" But anyway...

For onions I would first peel then slice in half from root end to blossom end, then cut off the root end entirely. Slice very thin but not paper thin, from root end to blossom end. Heat a heavy bottomed saute pan over medium heat, until the pan is hot. Don't use non-stick if you can help it. Add a couple tablespoons whole butter or oil to the pan enough to just coat the bottom with a bare eighth inch of chosen fat, if using butter be careful not to burn and turn down or remove pan from heat if too hot and allow excess water from butter to evaporate, basically until the foaming subsides, add onions and salt to taste, salt is important because it will draw out the excess moisture from the onions which have a lot of water. Saute saute saute, shaking the pan back and forth or stirring with a wooden spoon, basically cook them to your liking. I like mine half caramelized and very soft (which requires a lower heat and more time), while others may like them still a little crunchy like onions for peppers or cheesesteak. Whatever. I do recommend butter or olive oil, some fresh thyme leaves and black pepper also add a nice touch.

it's curious that you should say use non stick if possible.

I recently got myself a pair of all clad fry pans and
I really seem to prefer the non stick, both for results and
work required to cook.

the all clads seem so high maintenance and always require
a lot of butter and plenty of deglazing.

Why use vegetable oil?
Olive oil all the way, man. Mmm.
& I've found adding vegetable stock is always good for flavor...especially if you're cooking w/ tofu.

different oils for different jobs - olive oil doesnt get quite as hot as vegetable oil or sunflower oil, so they sometimes arent as good for quick frying. also, the flavour can overpower delicate foods.
but for onions, i would definately fry in olive oil. id fry mushrooms in butter, and peppers in sesame oil. cant beat a decent veggie stir fry, with peppers and ginger and spring onion and carrots and brocolli...
oh, and king prawns and shreds of chicken breast :wink:

sesame oil is way to overpowering imo. especially the toasted kind. It should really be used for seasoning, than for a cooking medium.
