Spawning EVERYWHERE?!?

I have finally got mushrooms to grow out of brf cakes. One mistake I think I made was before the dunk and roll, on some of them the "pins" fell off. Anyways I have gotten very nice healthy and big fruit. One thing I have noticed is that on some of my cakes they are spawning everywhere. I have a couple questions;

If there are two clusters of mushrooms and one is ready to be picked but the others arent should you pick them anyways to reflush them?
If they are spawning everywhere on the cake is that normal?
They also ten to grow out of the bottoms and sides of the cake which makes it hard to make the cake stable. What can I do about this?
I just want to get the most out of my cakes as I have 25 of them.
Also if there are new mushrooms spawning while one cluster is ready to be picked do you just flush them or wait for them to grow?
