Raw Cacao Beans - Do you have a good source?

Hey guys,

Has anyone got a good source for ordering these online?  I recently bought small bags from an organic shop and made some real dark chocolate.  It was mean as and I want to try doing larger batches. 

Also, does anyone else make their own chocolate from scratch?

Chocosphere has a good selection. Also Rare Tea Cellar has Mast Brothers Nibs.

How are you doing this fermentation without the pulp? Or are you preparing them in some other way?

I'm not sure what you mean, is there some crucial element I've missed?  I roast them, remove the husks, pulverise them in a coffee grinder, smash it in a mortar and pestle, temper it on a marble slab with paint scrapers.  I did it for the first time a week ago.

I think so, unless they've been fermented before you get them. In order to develope the flavor that are associated with chocolate they have to ferment in the pulp that surrounds the seeds.

He's using beans that have already been fermented. Most are. To get them in the state that will make it possible to roast and conch, they have to already be fermented and dried.

Yeah, they come dried in a airtight package.  It would be awesome to get it straight from the tree so I can ferment it myself.
