Sunday Gravy (part 2)

To make the Meatballs take
  1.25lb lean ground beef
  1.5 cup bread crumbs
  diced onion
  minced carrot
  2 eggs
 
Season and mix, make golf ball sized meatballs, brown in olive oil and then bake at 350 for 25 minutes.



Pasta is made by mixing three cups flour, 3 eggs, 1tbsp olive oil/salt.  Mix and kneed this for ten minutes.  Let rest for one hour, roll and boil.



The gravy was made by searing a 1.5lb pork roast and 3 spicy Italian sausages in a dutch oven.  Remove the meat, sauté minced carrot, onion and garlic in olive oil and then add three large cans San Marzano tomatoes with 1tbsp basil and 2 tbsp. greek oregano.  Put the meat back into the pot, cover and put in the oven at 350 for 2 hours.  After 2 hours add the meatballs, cover and cook for another 1 hour.

Now here is the most important part.  When you cook the sauce it can get acidic and bring out some of the bitter qualities.  Lightly blend 2 cans San Marzano cherry tomatoes with a stick blender, keep it chunky.  Add this plus 2tbsp sugar and 1tbsp fresh garlic plus 1/2 large chopped sweet onion.  Add this mix to the hot gravy and stir. 

This will add a nice fresh and sweet marinara taste to the rich and deep flavors you've spent hours creating.

I have made many styles of spaghetti and different tomato sauces but after making this one I now believe that I am on the path to the perfect Sunday Gravy.

Sunday Gravy Part 2

Sunday Gravy with fried polenta and braised pork medallions, Sautéed kale and ravioli.

See above for most of the recipes.
Ravioli filling was made with chevre goat cheese mixed with cooked spicy Italian sausage.  The raviolis turned out good but Im sure I would have liked them better if I had sliced the sausage and not mixed it with with the cheese.

Meatball Sub and Fries



I have one more meal today and one more tomorrow to use up my gravy.  Any suggestions?

I like mine with veal, pork, and beef in it instead of meatballs.    I'm at a loss for suggestions though.
