Ginger beer.

So I am making some ginger beer. I added a small amount of sugar so as to make it sour and definitely not sweet. My question is, if I want a big alcohol level, how long do I have to keep it fermenting? Should I open the cap after too much pressure has built up and then close it again?

Wish I could give you a useful answer. I've wanted to brew beer for a little while now, but just haven't gotten around to trying it.
I love ginger too! You should definitely report back on how it turns out.

Alcohol is produced by fermentation of sugars. Longer fermentation won't produce more alcohol if there isn't any more sugar to ferment.
With that said, I have very little experience brewing. So don't take my word as law. I know we have a lot of members who brew here and we might even have a brewing subforum, but you're going to get better answers on a forum dedicated to brewing.
Keep up the work though! Ginger beer is freaking delicious.

are you using ginger juice, lemon juice, sugar, water and yeast to do this? your not going to have an alcoholic beverage but a fine beverage at that, none the less.

well... how much sugar for how much water? ginger beer beverage sold in stores is not of alcoholic value

They sell alcoholic ginger beer at stores.
I sure hope OP isn't putting sugar, water and ginger in a sealed container without any sterilization or yeast. That's a great way to get some real 3rd world food poisoning. But I guess ginger is antibacterial... maybe do it anyways, OP

Lemon juice is going to take care of the bacteria mate. there's a cup of sugar for every one and a half liters.

never made alcoholic ginger beer. i've brewed ginger ale tho.
all you do is mix it up with sugar, water, yeast, pineapple juice/lime juice or whatever if you want, then refrigerate it then strain it. yummmm! i got my ginger from hawaii, it had some freakin bite yo

generally homebrew is left for 2 weeks in the carbuoy and the same in bottles. I used to make a kick ass ginger beer but it requires a good grasp of making a proper wort.

Your ginger beer will only take a couple days to ferment. I make it all the time. You can just keep tasting it as it brews so that you get the perfect sweetness/alcohol mix you want. Make sure to release the CO2 buildup once every day or two or else you'll have a bottle bomb. Pure sugar is easier for the yeasties to deal with than the sorts of carbohydrates you get when you're making beer.
