It shouldn't be white when you first shake it. It takes 24-48 hours to recover if it's healthy.

I've had plenty of bacterial contaminations lately and it looks about like that pic. slow colonization and the jars will even get pretty close to 100% but right about that time they produce metabolites and then you can start to see it become all nasty shortly after. I'm thinking my tyvek filters weren't good enough because I just switched to SFDs and this last batch was nothing but pure white and took a lot less time colonizing

Bacterial contamination isn't from spores infiltrating the filter, it's from prep mostly. SFDs probably let more moisture escape from the grain though!.

Not even close. SFDs hold moisture in your grain better than anything.
