the TEK to make this, so simple. get the meats, put some good rubs on it. We used this stuff my brother got in new orleans, i dont remember the name, but just use good rub
light some natural wood charcoal like this:
in the bottom of a smoker like this:
(it should have a water bowl in there too, to catch fats and whatnot)
once the coals are ashen, cover them up in the smoker, put the meats on the grill portion, try red bellpepper too.
then throw a handful of woodchips distributed across the coals. make sure the woodchips have soaked at least a few hours or more, whatever the bag says. ive heard apple smoked woodcchips are really good, but we just had some standard hickory stuff
add woodchips every now and then to keep the smoke and heat goin. 3-5 hours on that thing, you will be so happy with life

Im thinking about making a breakfast skillet or these boneless ribs I got.
Probably the ribs with potato wedges and some kind of veggie. Nothing fancy. I'll rub some garlic powder, onion powder, paprika, brown sugar, freshly ground black pepper on the ribs. Bake em at like 280 for a few hours, paint em up with some baby rays and crank the heat up to 360 for the last hour to finish em off.

I did a breaded chicken breasts with herbed crumbs and sour cream/Swiss cheese in the breading, roasted cow flower purée with a lil cream, garlic, onion, Swiss cheese. With olive bread crustini , checca (bruschetta) parm cheese melted on crustini as well as green beans and mushrooms with a lil carrot and broccoli slaw marinated in lemon juice.
Pasta tonight, a lil more simple due to friend bringing pancetta sauce over
