yeah, it's easier than you think.
you can make your own queso fresco at home with some whole milk and cheese cloth.
I saw martha do it once.....that bitch!

you can make a soft cheese like cream cheese using yogurt and cheese cloth
what you do is take cheese clotha nd layer it over a strainer and add the yogurt on top. what will happen is that the whey will seep out of it and you will be left with, essentialy, the curd.
Use unflavored yogurt, the biggest tub you can buy. Add spices to it and use as you wish.
RECOMMEND: Thyme; cinnamon; basil ( goes god with foccia and tomatoes...

ive made butter before...i dont recall how.
i once heard you could make cheese out of spoiled milk? or maybe i miss-understood.

well...
i was given some milk..."special milk" as you would call it...where it's the milk from a mother cow right after she's given birth. supposidly this milk is high in nutrients and vitamins..since it's suppose to be the first meal for the baby calf.
i've been told that i'm suppose to put the milk in an oven safe pan, add some salt to it and bake at 150C for 45 mins and i got myself some oven cheese.
it taste actually quite delicious wtih some cinamon and sugar and is usually eaten as a dessert. This type of milk is pretty hard to come by (unless you know some farmers or something) so it's a treat if you can make some oven cheese

Cheese making depends on what cheese you want to make and how much time you have..
The rest depends on availability of ingreedients and storage.
I made cheese once after seeing it done on Iron cheff... It was the milk battle and the guy basicaly boiled milk, added vinegar and strained it through a cloth then cooled.. What was let was a cheest that was breaded and deep fried... I did the same and it tasted OK but I knew that it was the very basic of cheese making..
