those are awesome!  Actually they're a house speciality and a favorite here!

a couple of months ago in atlanta I had picked up a large bag of pak choi, I
used a couple for soups and ate the rest over the course of a week the same
way, occasionally for breakfast and sometimes for lunch, a little soy and
lemon got me started that little binge but I couldnt pass up 5lbs of pak
choi for $2

Sauteed onion and shiitake with kale and broccoli braised in rice wine, vinegar, soy sauce, a dash of toasted sesamae oil an a dash of maple syrup, garnished with toasted almonds....  served along side a rare/medium lamb chop marinaded and pan braised in mirin with mint leaf, oil and truffle salt.
