Quesadillas!

Whole wheat tortillas with chipotle veggies (sautéed broccoli, zucchini, tomatoes), watercress, and cheddar with homemade salsa, avocado salad, and Greek yogurt (better than sour cream!).

Next time I might try using whole grain, soft corn tortillas, if I can find them.

Damn, I just sauteed mushrooms in leftover chicken fat for the very first time. Holy fuck that was yum. Way, way better than butter or olive oil.

The little pockets are baked in a ragu of roasted garlic cloves and royal trumpet mushrooms.

It's pouring rain down here, so I'm attempting to make homemade vegetable stock in my new Dutch oven.  I basically threw all the veggie scraps in my freezer (broccoli stalks, portabella, red bell pepper, kale and chard stems, bits of yellow squash and zucchini...) into the pot with cold water, some salt, black pepper, red pepper flakes, garlic, and dried "Italian" seasoning.  I didn't have any onion or carrot bits, so I opened a jar of homemade pickled onions and carrots, rinsed them well, and threw them in.

I read that cruciferous veggies aren't good for stocks, so fingers crossed!

I wish I had a bay leaf, but it's simmering now and smelling delicious.

Yup!

The stock turned out awesome in spite of the lack of bay leaf and the addition of the broccoli stalks.  It's a warm, golden brown colour and tastes a lot bolder than the best boxed broths.  I used part of it to make veggie chili for tomorrow's supper and froze the rest.  The stock had a nice background heat that I think will spiff up my chili.

for stocks I find the slow cooker is the bomb diggity

you can load it up in the morningn and let it simmer all day

then when it's time for dinner you got all the stock you need and then some to put by

I've made broccoli broth before with leftover stalks and ended up using gel filtration to make a consomme with it.  It's still in my freezer haven't decided what to do with it.  Could make broccoli soup I guess but that's boring.
