1/2 teaspoon salt
3 egg yolks

in a stand fitted with a paddle attachment add the sugar, salt, egg yolks, and vanilla extract and mix on low until smooth.Add the butter and milk and mix slowly.

change the paddle attachment to a dough hook and add the remaining flour. Mix slowly until dough is smooth. refrigerate for 60 minutes.
Roll the dough onto a flour surface. the dough should be about 1/2 inch thick. Using donut cutter cut out the donuts.

Place on a greased baking sheet cover with plastic wrap and leave in warm place. The donuts should rise to nearly double the original size and spring back when touched.

Heat 3 inches if vegetable oil in a heavy bottomed pan. The oil should be 360 degrees Fahrenheit.

Carefully place the donuts one at a time into the hot oil. Fry for 2 minutes or until golden brown. Remove with a slotted spoon and drain on wire rack.

To make the glaze put the sugar in a bowl and slowly mix in the water or milk until smooth. Pour over cooled donuts.
