Shiitake is going to climb up the sides of the bag no matter what you do. It just does that. Don't worry about it consuming energy. Shiitake blocks have plenty of 'energy' to flush for a long time. I have sawdust blocks outdoors on their third year of flushing, and the mycelium was climbing above the substrate in the bag three years ago.
The sign a shiitake substrate was made too wet is premature pinning in the bag before stripping it off when full browned. RR

Thanks for the input RR, always is good that big growers expose his experience so that we can learn from.
@OICU812 yes, I take notes of everything which I think is relevant. But for the substrate moisture I just tested the water I need to hydrate the wood stove pellets by hand so maybe it´s time to up one step and test the moisture % that works best for me.

Just make them on the dry side and then soak for an hour or so before fruiting. If the sawdust is slightly dry it will colonize and brown much faster. You can always add the moisture for fruiting later. RR
