Braised Beef Ribs ala TM (a pictorial thing of beauty)

After reading lots of online recipes for short ribs and the like, I decided to base my own recipe on what I'd gathered. I just wish I could upload the wonderful smell that permeates the house when these are cooking.
What you'll need:
A dutch oven type roasting pot (with a lid), A large skillet, A food processor or tons of patience, A Dial-O-Matic slicer, or other way to slice onions 1/8" thin.
Ingredients:
4 pounds Beef Short Ribs 3/4 pound (or more) Boneless Short Ribs 4-5 pounds Beef Back Ribs 1/3 cup Olive Oil 1 Cup Granulated Brown Sugar 2 14oz cans Beef Broth 14oz Red Wine 12oz Tomato Paste 15oz KC Masterpiece Original BBQ Sauce (or your favorite) 2 tbsp Minced Garlic 4 tbsp Kosher Salt 2 cups finely chopped carrots (here's where the food processor comes in handy) 2 cups finely chopped celery 2 large onions (1 yellow, 1 sweet, sliced thin as shown below) 5 Idaho baking potatoes (peeled and quartered lengthwise)
Method:
Preheat the oven to 350F. Lightly sprinkle Kosher Salt over all sides of the meat. Brown only the short ribs and boneless short ribs in the skillet on high, 3-5 minutes a side. I did it in 2 batches:

Place them in the dutch oven:

Cook your carrots and celery and a tbsp of Kosher Salt in the skillet on high using the same olive oil:

Halfway through, about 9 minutes, add the minced garlic:

When done (just starting to brown), pour the veggies over the browned ribs:

Then, add some olive oil to the skillet and your sliced onions:

(Covering the skillet will speed things up, but stir often!) You'll soon have this:

Then, spread those over the ribs and veggies:

Now add the wine (2 of these little bottles):

And 1 can of Beef Broth:

Then, mix the Tomato Paste, the other can of Beef Broth and the BBQ sauce together until smooth. Lay out the Beef Back Ribs in the Dutch Oven on top of what's already there and cover them in 1/2 the sauce mixture (only a little sauce is shown here):

Cover and bake for 1 hour @350F, then it should look like this:

Turn the Back Ribs (on the top) over and coat them evenly with the cup of Brown Sugar, cover and put back in the oven:

After anther 45 Minutes, remove the Back Ribs from the top (they are done) set them aside and cover them to prevent them from drying out:

Next, remove all but one inch of liquid from the roasting pot, top with the other half of the sauce mixture:

Lay on your potato wedges and bake for another 45 minutes, UNCOVERED:

The Finished Product:

Serve and ENJOY! I mashed my wedges and poured some pan gravy on 'em! YUM!!

Kickass meat and potato dish right there.  I would have thrown a jalapeno in for some extra kick!
