Yeah, you definitely want to dunk and roll (in vermiculite) if you haven't yet. Hopefully you havne't gotten this far without reading about it. Hopefully you've already done that...
Okay, so with misting and fanning (you mist, THEN fan), you'll probably find yourself fanning more often than misting. If you just dunked then you probably don't need to mist right away as the surface moisture content will be high enough. So you'd fan.. Then after a day or so the cake will start to dry somehat on the surface, so you start misting to keep the humidity on the surface high.
As a general guideline, I'd say you want to mist at least 2-3 times a day (always fan after misting). If the cake looks like there's plenty of moisture on it already, you probably don't want to keep misting because you don't want standing water on the cake. If there is no visable moisture on the cake, you definitely want to mist. Ideally there should always be a bit of moisture visable on the cake (usually in the form of tiny water beads). I say you'll end up fanning on average about 4-8 times per day.
Think of it like this... The more FAE, the better, but you don't want to fan so often as to overly dry out your cake. You already see what I said about misting... So, through experience, you have to figure out how often to mist and fan while trying to keep your cakes in optimal growing conditions. This comes with experience.
But for right now, for starters, just assume you'll be misting and fanning on average about 3-4 times per day. The way the SGFC is set up, fresh air will constantly be going in and out of the tub, but you still want to fan because it drives air into the chamber as well as dissapating any built up CO2.
Evaporation is a pinning trigger, which is why I like the idea of misting and THEN fanning. Mist the cake so now there's moisture there. Then when you fan, you're delivering FAE as well as kick starting some evaporation. Really make your cakes want to pin!
There are a handful of fundamental principles that once you understand, everything else falls into place much easier. This is the same with almost every hobby or skillset. Learn the fundamentals and you can deduce your way into knowing something.
Good luck!

We've got a winner!!!
When someone knows more about something than you do, it's wise to listen, my friend.
It's totally relevant. You dunk to improve moisture content and misting also has to do with replinishing lost moisture and keeping the surface humidity high. So how it that irrelevant? Your logic fails.
If you come asking such simple questions as when to mist and fan, then it's wise to take advice from people who know more than you.

I'm sorry, I thought people who were asking for help were supposed to be respectful. It's not like we're making fun of you for asking such a simple question. This is beginner cultivation 101... If you read up on this AT ALL you would have already known the answer to your question.
And did you not read that I said it was relevant?
We're talking about moisture and humidity control, so it's totally relevant.

Dude don't listen to theses clowns you are no d bag. I got your back man.
Here is what you do. Just fan them for now and wait until you start to see the cakes turn blue. If they are turning blue that means the moisture content is good and also means that they will be more potent! So just mist enough to where your cakes are turning blue and if they get too white just stop misting and let them get some more air.
Probably would be a good idea to set a fan up directly at the fruiting chamber too. ( ya know for plenty of air circulation)
Good luck dude
