Chicken Rollatini with Spinach alla Parmigiana
Happy Father's Day!!

I know that tomorrow is actually Father's Day, but seeing as how we already have things planned and I'm not in a position to spend and real money at the moment (this meal cost me a about $35 -- plus $15 for a bottle of of bourbon >_<), I thought I'd got the "I love you Dad, let me feed you" route. First, I need to find a recipe to tweak. Thanks to almighty Ythair and his tendency to hoard recipes I found one:
Chicken Rollatini with Spinach alla Parmigiana with half-assed
pomodoro sauce (it turned out great even if it was half-assed) and a side salad. I even got some Italian bread which I ended up completely forgetting to prepare which is fine because I will make use of it another day. Dad (and my sister's boyfriend, the father of my niece) were happy so I think it was successful. Tomorrow, BBQ with the sister boyfriend.
INGREDIENTS- 12 skinless, boneless thin cut chicken breasts
- 1 cup Italian seasoned breadcrumbs
- 1/4 cup grated parmesan cheese, divided
- 1/4 cup grated romano cheese, divided
- 3 large egg whites (~10 tablespoons)
- 8 ounces frozen spinach, squeezed dry of liquid
- 8 tablespoons part skim ricotta cheese
- 8 ounces part skim mozzarella (or however much you want, I probably used more like 12oz)
- olive oil non-stick spray
- salt and pepper to taste
- bread for garlic bread, which I forgot to prepare
Pomodoro sauce:
- 1 jar of your favorite sauce
- 3 cloves garlic, minced & smashed
- onion, diced
- mushrooms
- carrots
- fresh basil
- crushed red pepper to taste
DIRECTIONS:Ingredients. You can't do anything without them.

Combine breadcrumbs and 4 tablespoons of your grated cheese in a bowl, set aside.
Wash and dry you chicken boobs then rub them down with salt and pepper. Oh, you should probably start preheating your
oven to 450° and lightly spray a baking dish with olive oil.

Get a saucepan with oil hot. Toss in garlic and brown then throw in onions and carrots; cook until tender. Add mushrooms
and continue cooking until desired doneness. Throw in your jar of sauce, stir, reduce heat to simmer.

Shred or finely chop ~3 ounces of mozzarella cheese and combine with remaining grated parmesan and romano cheese,
spinach, 3 tablespoons egg whites, and ricotta cheese. Stir like the dickens until you get a good consistency or until green
is perfectly mingled with white. Sometimes these things are visual, y'know?

Time to start loading up some boobs (you already rubbed them down, now we get to blow our load all up in them, wrong forum?).
Lay one out and spread some spinachy cheese mixture on it. Roll loosely, seam side down. We're gonna do this a few times,
like 12 or something. (Awww, yeah!!)

Dip chickums in egg mixture and roll in breadcrums; place seam side down in that baking dish you prepared earlier. Continue to
do this with all your chickums, this is a bitch to clean if you get overly excited so try to keep all the happenings in the bowl. Lightly
spray with more olive oil to help with browning. Pop in the oven for 25 minutes.

While your chicken cooks, I'm going to step aside and prepare a salad (something else I forgot even though I was in possession
of, cucumber

). Spinach and spring mix ready pac (fuck you, I'm not making this any harder on myself than it needs to be),
mushrooms, tomatoes, carrots, and red onion. FUCKING CUCUMBER!

With about 10 minutes left on your chicken you will want to add the basil to your sauce, and any other herbs you may want. Make
sure to remove sauce from heat not long after 10 minutes to avoid it turning your sauce bitter, anything more than 20 and you
will be kicking yourself in the ass.

Ding!! Chicken is almost ready, it's time for the final step. Mmmm... it smells great.

Slather that shit with your sauce because it's going to be amazing. Top with slices of mozzarella and throw those birds back
in the oven for another 3 or 4 minutes or until the cheesy is all gooey looking and bubbly.

Serve with side salad, additional sauce, and bread (FFFFFFFUUUUU!!).
