Let them be until its fully colonized/consolidated. Keep the pins on there when you dunk and roll(Careful when rolling, you can just sprinkle verm on pin parts), they'll turn into monsters.

I am 5 days from consolidation on the fastest one will the pins not mature? I have about 80 pins in 5 of the jars. There were alot less last night. And do you take into consideration the botttom of the jar when estimating your colonization percentage because the sides were done about a week ago.

Colonization is when the mycelium covers the outside part of the substrate while consolidation is it working towards the middle. So IMO I count the bottom yes.
The pins may start to mature but it won't hurt them any, you'll just have invitros. Some people like to grow mushrooms invitro and then harvest when they birth the jars.
I've tried plan B which is birthing them early and using a sterlized knife to cut off any uncolonized substrate then dunking/rolling. However, most people recommend to just let them colonize/consolidate.
Like I said if you do use the colonizing/consolidating method you'll get some monsters from the pins already in there and you'll have more substrate.

Ok so I will wait. I have one in there that is atleast an inch and a half and is in the dry verm layer is that alright?

Should be fine, I've had one cake do that as well. That cap will probably be mature when you birth it. If there are some that are already completely mature then by all means pick them Just leave the small pins for fruiting.

Like I said before. Optimally you'll want to let it colonize. HOWEVER, you can birth it and cut off with a STERILIZED knife the uncolonized substrate. Rinse very thoroughly first. Then Dunk and roll. I did that to a couple of my cakes and they turned out fine. One of them is actually mad pinning you can check it out in my thread.
You can go ahead and birth the cakes that have consolidated 6 days if that is correct.

I had 2 that were at 4 days and I went ahead and birthed them. They are in water now. I am going to wait on the others unless they start to get worse. The other jar I birthed tonight had twelve 1-2 inch pins with at least 50 smaller ones.

It was the second fastest of the bunch. It was supposed to be done consolidating the 19th. All of my other Cambodians will be done consolidating the 21st but I dont know if I can wait that long they have just as many pins only smaller.
