First Enoki Pins

Hello all,
I spawned a quart of F. velutipes (Enoki/Enokitake) on Feb 10th and this evening while checking some blocks I saw this:

This makes for about 3 weeks of colonization.
Does this fit what others have seen?
I was expecting a longer consolidation period.
Often a contam can cause early fruiting, but this block does not look at all contaminated.
I let my Shitakes and Namekos (and Gyms) go for months. I find that Oysters start fruiting right after colonization and Herricium even earlier.
Let me know what you think, and thanks for the time.

P.S. I am thinking of stripping the bag down to the level of the sub for this block. I do not need to long stems so much. Good idea?

Wish I had some constructive input; but my one attempt never made it past grain Just too many other species higher on the priority list

JD if you don't want long stem then you should unfold the bag to reduce the co2 and give it a little more light for cap development. my golden enoki made a lager cap when i gave it more fresh air and light. hope that help. please keep us updated on your progress.

my golden enoki was not fast. it colonize for 5 weeks before pinning. you may have a fast fruiter. once you open the bag you may find that they may pin all over the block.

This is another issue that I have struggled with...to use the traditional slits, leave an open collar, cut the bag down to the level of the sub, or strip the bag completely.
I have my first block in a very wet GH and think that I can strip the bag off.
Those I put into my less foggy outdoor GH I will likely just use slits.

sound like you got a good plan there. see which one is better. good thing you have 2 green house. i would like to know which one of the block fruit better for you.

So i have some enoki going on agar now, just did my T1 from spores. They are wild i found in the fall and took prints of. They were quite tasty. Im usr to the commercial, long white stringy ones. I was really surprised when i ID the wild version to learn they were even the same thing. So when i do go to grow these out, will they look like there wild version, cultivated version, or somewhere between. I realize that the reason the cultivated ones look the way they do is through selective cultivation. Just wondering how environment plays into it? Here is a pic of them in the wild.

Wow Chef, those are indeed completely different looking.
I think that my grow may shed some light on this.
Mine have clearly started out looking like the commercial type, but I just opened them to FAE and so we will see.

When I grew these I kept the CO2 levels high as I wanted more stem and less cap...this way they were like mushroom noodles...very yummy in the wok.

Looking good JD 
For my first grow, I did 1 cake standard sitting in the SGFC, the others were wrapped in plastic for higher CO2.

IMO I didn't have enough CO2 in either one, but you can see in this picture the difference in the fruits. The Enokis in the bottom left corner & center top are from the cake w/out plastic.

The next grow I did, I just left them in bags w/ about a 2" in diameter hole at the top.
 
Now, I use water bottles that I cut in half & fill up, then tape the top & bottom back together. I'll be writing up a tek soon for them.

Great stuff TL.
I am just starting with this species and am just working out what it likes to eat and how well it grows in So Cal. I do not spend money on controlling my environment temp wise.
As usual, I am starting off trying plain straw and plain sawdust. Both appear to be strong. This species seems to start fruiting pretty much right after reaching 100% colonization.
I want to try some on a supplemented block next.
