some king oysters!

so here are some kings ive been working on!

im gonna edit to add more info.

i started from a wedge that a friend here hooked me up! i put this on agar then to grain, then to straw. colonized at around 70f and coldshocked at 55-68 for a few days till it began to pin. then temps were held at 68 now that they are fruiting.

heres what they looked like 4 days ago!


and today



ill keep ya posted in the next few days! they are starting to look pretty!

There really dense and meaty i usually grill them or just sub them out for meat in a dish for vegans. The last vegan dish i did i put an espresso,chili powder, Cinnamon, and Cayenne pepper rub on them and seared them. Served with some other spanish sides. Good stuff.

looking good jj i need to try those kings i just haven't got around to it .. i have a quart of lc, i'm just more set up for my other oysters and the fae.. I will try them someday soon i hope

Ha no problem, all are welcome. I just got my chickens so ill have to work on some good mushroom and egg recipes. I just put my first fully colonized bucket of kings into fruiting yesterday. Fingers crossed.

woot.

Nice the weather here is gonna be 60-70 for next week and rainy so my three outdoor baskets of oysters (pulmonarius) should get some action.

I also just put another basket into fruiting and harvested my first oysters and dunked the fruited substrate.

And I also made up a bunch of straw + birdseed bags and they look fully colonized so exciting :smile:

I cant wait to see straw results compared to newspaper.

Kings are my favorite, by far. Amazing taste and texture.

I usually grow mine on straw logs, but have a few little quart-sized take-out containers going right now as an experiment.

one question tho, do you guys thing if i dunk these straw logs they would produce a flush or two more? ive read straw is sometimes a one flush wonder, but it would be nice for more pretty fruit!

Nice shots!

Chances are pretty good that you'll get a 2nd flush with a dunk, but probably not much more than that. My second flushes with Kings are always less than half of the first flush.

With kings i wouldn't remove a colonised block from the bucket.  It'll stay more damp if you don't and i also prefer to top fruit them.

Yes, they can be annoying and pin down the sides if the block has shrunk.

Did you do any high CO2 things to induce that pretty nice pinset?

when i sealed the bags i left a bunch of room on the top and left it filled with air. them i just let the blocks colonize. left them in a cool room for a few days to enduce the pinning. i think the bag helped with co2 build up.

i dont fan as much with them too, to allow them fatter stems.

Kings don't marble naturally.  The marbling effect is happening from you misting your kings then them drying out.  You need to keep your humidity up.  Your last mushroom pictures look way too dry.  They'll still taste yummy.

Your biggest flush will be your first since your using straw, you will get a small second flush but that's all.  Have you tried these on sawdust?  They perform better IMO on sawdust and have a richer taste.
