Dunno how you feel about dairy, but a small amount of greek yogurt or feta cheese is usually pretty delicious with mashed potatoes.

The potato plant produces a fruit, but it is not the part that we eat. The part of the potato plant that we eat is a stem tubar, which is classified as a vegetable.

Onions, a bit of butter and a little milk to make them creamy.

Powder
Use real garlic. Mashed potatoes present an excellent opportunity to use raw garlic, copious amounts will go barely noticed & give a perfect balanced flavor.
Garlic is very delicate, the average diet will barely see any that isn't cooked.

i used to love feta cheese... feta is not cow dairy you know, i believe it's from goats milk. you could mix red Valida onions and fresh garlic and add some of the spices that you like... i'm not trying to bust your balls when i say this but you could make potato pancakes and add some bannanas in the mix for a sweet taste.... not too much though as potatoes pancakes contain ingredients like onions which might conflict taste wise with the banana...
i was just listening to gary null in a archive video recently and he considers sweet potatoes a super food. i don't eat regular potatoes at all but i love sweet potatoes with honey... you should try it, i'm sure you'll love them...
