Stumped growth on Lions Mane? AND are these people off their rocker? an agaricus question

First, sorry, i have no pictures.
I put my lions mane to fruit like 2 weeks ago. A lot of big growth is going on, but there are some "floretes" that look just like cauliflour floretes and have stayed that way. Just yesterday I noticed a couple of them are starting to look more like short strings, as i think should be the way they should look. my question is. Should I, by this point, asume its all dud primordia or should I give it more time?
if for some reason (oh no, here comes a confession) they didnt get the correct conditions for 2 days would that have affected them enough to not grow at all, or is maybe their growth just a bit stumpped and it'll take longer?

I bought a mushroom grow kit for agaricus. Bottom line it says i SHOULD let it get contam. Eh?????? I KNOW agaricus dont grow in sterile environment, but honestly, full on contam, is that right?
It literally says to just wet with tap water and wait for "black strings to cover the top of the growth medium"

Strange that it would say that; I guess what they mean is "don't steralize it. Agaracus species need soil bacteria to initiate fruiting. But you certainly don't want contaminants like trich growing either.
