Maybe a contamn which you will see soon, that happened always to me. First always everything looks fine, everything white and then the first pins are appearing and then you will see also mold :/.
It doesnt need to be the case for you but just saying what it could be.
Would be good to see pics or more information. These bags are in a fruiting chamber right ? How is the fruiting chamber set up ? Holes ? Perlite ? Polyfiled holes ? First grow that this happened ? Or always ? Or was it your first grow anyways ?
No infos :/.
Not that I would know then 100% the answer to it but maybe someone else, just saying that without some more infos probably not even the best grower could help you .
I just can talk for me and my experience I had till now the same problem, my bulks always looked fine, everything white and good. Then I put them into the fruiting chamber with perlite and polyfilled holes and after around 2-3 weeks I will see mold.
Thats because it was always too wet. Thats why I was asking how you set up your fruiting chamber and so.
Right now I also dont know if I should use perlite with opened up holes or no perlite at all with opened up holes with straw in a laundry basket which is in a terrarium.
Right now trying it out cause nobody gives me an answer to it :/.

First take my advices with a grain of salt because I just grew shrooms with PF Tek 2 years. And now just a few months Iam trying again bulks which failed for me 1 year ago. So bear this in mind pls, I just want to give you some input until someone else is coming with more experience with bulks or growing in general.
So because of my experience I would say try it with less moisture thats because I have lost everything always because of it, Iam nearly 100% sure, for my case at least.
Ive tried now a bulk with coco and alot less water and also opened up holes without polyfill and guess what ? The first time no mold, nothing. It may be a little bit too dry but thats no problem, Iam just misting right now here and there a bit and they are soon ready to harvest .
If you have it too moist you risk that somewhere it will create small puddles, and mold / bacterias love that alot.
Now again not saying that is your case but it may be, from the pics your bags seems to be pretty wet. And now if you put them into a fruiting chamber maybe with perlite and polyfilled holes like I did then its probably too much. Your bulk will get more and more wet f rom the air and maybe create muddy spots or even puddles in the inside of the bulk which you dont see first.
If you have it real moist then at least your FC should be able to breath alot and if you polyfil holes too tight it may not.
Now again Iam not saying Iam 100% right, but for me this was the case at least I think so.
When I threw out my bulk for example with straw and I grabbed into it, it felt totally muddy at these spots with mold... just too wet. And if you think about it, first everything looks fine and white and after you put it into a FC with more moisture and then after a few weeks mold you can do yourself the math.
I just think the bulk generates already enough moisture itself.
Yea dont know man, maybe thats not your problem but maybe some input you can think about.
Iam also curious what others have to say about it.
