I wouldn't do that if I were you. The more you mess with a colonizing sub the more problems you run into. Be patient and try not to look at it so much. FAE to soon will really mess with your colonization not to mention cause contams.

Here http://www.shroomery.org/forums/showflat.php/Number/7835934#7835934 It says that Do not incubate bulk substrate trays at temperatures over 72F This type substrate will generate a LOT of heat internally; As it colonizes.
Is this true ? :/

Word. You just spent all that time adjusting for moisture content. It should have 99% humidity too, because it will be covered and only allowing for a small amount of gas exchange. Once it's exposed to FAE it can loose some moisture, and the mushrooms pull even more out of the substrate. That's when you mist.
I have heard users say that the temperature increase is not very significant. I have never tested it. Molds and bacteria will benefit from the increase in temperature more than cubensis would benefit, but the cubensis will easily survive higher temps and temp swings. If you have a mold, I hear it's a good idea to lower the temp to around 60 and give it as much fae as possible by sticking it outside. There's a lot to be said for being as clean as possible, limiting exposure (like don't work on the floor and washing your hands), and working in a rhythm to get it over quickly.

The need to be able to build up co2 so that they can put it in the ground. It's part of how they break down the substrate and get their minerals. Put some saran wrap over it if you need to see it. I'd do that next time tho. For now, leave it alone for 10 days.

update .. How much % is colonized ? I am worried about red circle ... is it possible to be a contamination ? I have the tray on 27 celsium .. is that too much ? thanks for any help

27 C = 80 F. which is fine but you do know they are fine at normal room temps (i know my house is never 80F usually closer to 74F (23C) or 70F (21C) But im a fat ass and dont like it hot.
As for the red circle it looks like mycel piss. But please wait for someone to agree before you take my words for fact 
Id say that is 100% maybe a a little less how long has it been looking like that? Cause u should let it consolidate a few days it will guarantee you are at 100% and it will make it so it doesnt have to sit in the FC while it consolidates.
