Hello, gourmet and medicinal forum!
I was hoping somebody here would know if ustilago maydis is commercially cultivated in the states. I have searched online several times, but cannot find a place from which to purchase this delicious fungus!

I am so curious about this. Is it really delicious? Even if you're not used to it. We're in a corn growing area and in our hot, humid area, smut is the number one problem. I could probably buy it for $0.10 per lb., the same price as corn. I'll have it canned, make money and help the farmer as well. But how does it taste? Like volvariella? like bolete? or like trich?

I can't think of any thing to compare it to. It's sweet and earthy and... I dunno sharp? I love it! I had it with plantain once

Hmmm, I like the sweet part, don't like too earthy but sharp? It does look gross though. People here looked at me as if I was mad when I told them that it's a delicacy. Funny how it's sought after in one place and the bane of their lives in another place.

I haven't tried it many times or that recently, but I remember it tasting like sweet corn...excluding the texture.

I've yet to try the smut in a can. Seems kinda gross.

That looks horrible. I dont think i could eat that out of a can.
I found this on cultivation http://www.eric-goldscheider.com/id103.html
Seems like he just squirts spore solution on the fresh silks on each ear. Seems easy enough, just need some spores, and corn, Silver Queen and 'Golden Beauty are sweet corn varieties that are more susceptible to the disease.

I haven't tried it yet. There were only a few grains that were not black inside. I'll look for some more in the cornfield today. Hopefully there's enough for a meal but not too many as that would be a bad harvest  The smell was like fresh sweet corn. I imagine it would be delicious. Exactly what stage do I harvest it? when it's all gooey inside?

I don't know how it is over there, but it tastes good enough that some might pay more for it then the corn it infected.  I think the appearance and texture would be the biggest issue, at least here in the states...
