This is an idea for a prototype.
This system will function like an incubator in reverse. It will consist of two tubs, one within the other, nuts and bolts will be used to secure the two tubs in place . The outer tub will have two holes on ether side as high up as possible for water to flow with the inner tub resting inside. Gromets will be used to connect black tubing as an entry and an exit for water. Several tubs may be connected together with this setup.
The first tub's entry will be connected via black tubing to a "resivuor " set up to a continuous pump. A water chiller will be set up with the rez. The water will be maintained at a temp of 40'F. The last's tubs exit will lead back to the main rez via black tubing thus completing a circuit of cold h2o.
This is a good chiller for a few tubs... http://www.growannex.com/environmental-control/water-chillers/heaters/ecoplus-1/10-hp-chiller A hole can be drilled through the inner and outer tubs and a piece of pvc can be glued using silicon to allow for a port to be connected to a humidifier. Can also be stuffed with polyfill to maintain humidity and allow fae.
As a lid I like to use cling wrap and duct tape. Cheap and effective. Ice can be place in the rez of the humidifier to keep the mist cold.
At this point I would follow the teks for colonizing woodchips or sawdust with chosen species. Once complet the idea is that the mycylium can be cased and fruited in the tubs with a winter like environment.
Any thoughts tips or foresight?
Edit: I will build the prototype in about a month and upload some pics. I am currently in the process of learning and want to try out some pans and azures. The switch from cubes will take some time. Bare with me or please take this idea and let it be fruitful.
Peace.

I decided to use ice chests instead of storage tubs for the rez and outer tubs.
The rez can serve as a humidifier if you use aeroponic foggers and a few air pumps + stones for positive pressure. Pvc and epoxy can be used to connect the rez to the bottom side of the tubs to act as a drain as well. This set up will require the fruiting chambers to be raised on a table to allow gravity to do most of the work.
The foggers sterilize the water that it turns to fog. A timer can be useful if 100% humidity is too much.
