This has also happened with my previous bag. I let it grow out for a few weeks and it turned white and solid, I couldn't even mix up bag. The smell is very sharp and rubbery. When grown out, it is bright white and looks like mycelium, but is much harder.
In the picture though, I just mixed up the bag, thinking it was mycelium, but then noticed the stringier texture and the smell.
Does anyone have experience with this and can identify it?

If there is an unusual smell then it's probably contaminated. What in temperature has been colonizing in?

I have not been controlling the temperature, but it is nothing too extreme. Sometimes warmer than room temperature, sometimes colder. My other bags seem to be doing fine.
I am aware that smell= most likely contaminate, but I am just curious as to what it is since I couldn't find anything from searching the forums.

I notice that the smell is much less after I had mixed up the bag. It really looks to me like mycelium. I also notice that 2 of my other bags have this smell too..
I am really at a loss. It seems just like mycelium to me, but with a smell.

I actually think this might be the smell of mycelium. It does smell kinda like mushrooms. It also shows all the characteristic of normal mycelium, such as normal growth, shape, color. It is just somewhat more rubbery in texture.
