I stole this from the INTERNET dont hate me


I made this for a restaurant so she could learn and add it to her menu. This is a very traditional slow-roast pork from the Yucatan. Its a very simple dish, rubbed, allowed to marinate, slowly roasted and enjoyed.

1pork butt

the rub;
annato seed
cumin seed
allspice seed
black pepper
clove seed

grind that into a fine powder, add that to a lil oil, fresh squeezed orange/lime/lemon juice, add jalapenos, and blend, add a splash of tequila, finally rub your pork butt down generously lathering all cracks and crevasses. Tomorow you'll put this in a pan, a layer of cellophane, a few layers of tin foil, so its nice and sealed, cook for 4hours (varying depending on amount of meat). When that is done, I like to let it cool, cook rice, add rice to banana leaves, add puerco, slice of lime, and a lil pico; wrap and serve!

Personally I leave out the layer of cellophane, and instead of a jalepeno I opt for habeneros and manzana chiles. You can also make a very good sauce with vinegar, lime, a dash of salt, sugar, thinly sliced Habenero and diced Manzana Peppers.

Lovely recipe, a place around here sells this pibil in a torta that is oooooohhh sooooo DELICIOUS!!!
