NEW GREENHOUSE 2.0!!!!!!! (5-13-12)

So here is the new greenhouse i built in my basement. Its about 2.75ft wide, 6ft long, and 7ft tall. I have only had it running for about two weeks and have already made some big improvements. It was all 6 mill plastic but i realized i wasn't getting enough light so i cut holes and covered them with clear asitate plastic. I also added a 4ft florescent fixture above with more clear plastic and a 2 ft T5 on a side window.I have the greenhouse in front of two basement windows that im going to put more clear plastic in front for more light also. I have a cool mist humidifier that i have on a zoomed humidistat to control the humidity. I have a fernis filter on one side for FAE and just today added a small computer fan that runs on 15 min intervals. The door is just a plastic flap with 3 pieces of Velcro to keep it shut, so it also allows for some FAE. Well im going to put up the pics i took today and if anyone has and advice i would be grateful as i am still relatively new to mycology. PS im a chef so if anyone needs some recipes, no prob.

sorry forgot the questions. 1. Do you think there is enough light for oyster species such as elm, pearl, and grey? 2. Do you think there is enough FAE for these species? 3. Do you think i should exchange the cool mist for an ultrasonic? 4. Would you say its preferable to do smaller straw bags vs larger logs given my space limitations? Im sure i have more but this will answer my biggest questions.

Nice little greenhouse! I like the windows you installed.
It looks like they're getting plenty of light, and your bags are putting out pretty good clusters. But it looks like you might need some more FAE; your caps are looking a little small for how long the stems are, which is indicative of high CO2.
Other than that, looking nice!

lol ya, left over PVC, free plastic sheets from work, and LOTS of duck tape and there you have it. I put a small comp fan in there that turns on every 15 min for about five min. Between that and the second flush having more light the caps are starting to fill out better. I still think i might need more FAE though. I was thinking since the GH is right by the window, i could just set up a simple exhaust fan setup. Not sure about leaving a window open though when its about 20 F out at night.
So far i have harvested about 3lbs. Just about the right rate to keep the wife stocked for her canned mushroom habit:)
I have a bag of corn cobb bedding, paper bedding, aspen shavings, and coffee that produced two good flushes. Was wondering if i should dunk it and go for a third or if its just a waste of time and space?



 Few pics from today. To be perfectly honest i cant remember if these are pearl oysters from a kit i bought a few years ago or elm oysters i cloned from wild i found. Either way there still a bit leggy.

BTW bigpharma, like the youtube videos. Very helpful. Hows the production? Are you just doing it for supplemental funds? I am in the process of writing a business plan for a restaurant thats on 1.5 acers and am going to have a greenhouse with an aquaponics system and mushroom house. Small scale mostly for restaurant use and sales at the farm stand. My house is basically the research and development. Probably going to use alot of your setup. Keep up the videos!

Thank you sir. Still a work in progress so I'll keep up with the updates an improvements a they come. Got the box fan set up to my filter today to pull air. The light additions are defiantly helping the cap formation on this current bag.

Thanks all. I just cooked 5 straw bags, about 7# each and two 6.5# saw dust/bran blocks to do a side by side comparison of production now that i have my conditions tuned. Will post a grow log of the results. What do you guys prefer? Cost isn't to far off for how small of a grow im running. Just wondering. Ive got Hon Shiminji spawn almost ready to inoculate to bulk im excited for. Anyone ever grow these? Think people also call them white beach mushrooms.

I would strongly recommend a Lion's Mane grow. They do excellently in the same environment as oysters, and they're absolutely delicious! They also grow surprisingly quickly; you realistically can be harvesting fruits within four weeks of grain inoculation.

Very cool, ill have to look into getting some lions main spores or spawn. Where did you get yours from? I usually take tissue samples from the mushrooms we use in the kitchen at work or wild i find.

I order most of my culture from everythingmushrooms.com. There are varieties of Pom-Poms that grow across the country, so you might be able to find one when in season.

So here are the new improvements to the greenhouse. I pushed the whole thing out 14". May not sound like much but it makes a world of difference. I added a few computer fans that kick on with the cool mist when the humidistat tells them to. Love that thing. Changed out the metal shelves for plastic because the old ones rusted. Put the clear plastic on the back to let more natural light in from the basement windows. Im getting ready to add another 4' fixture on top since i have more room now. Here are the new pics. BTW 3 large rolls of gorilla tape have gone into this thing so far. Love that stuff!

 This last bag is on its third flush. Its a mix of corn cobb pet bedding, aspen bedding, coffee grounds, and paper bedding. One of my earlier experiments that has produced well but not that cost effective.

Is that exposed to air? Are you concerned about spore contamination? Double-check me on this, but IIRC you can mist the moldy areas with peroxide, that will slow down the mold and not harm the mycelium. Personally, though, I would throw out the bag; not worth the potential risk to the fruiting area for a small cluster of mushrooms.

No, peroxide is only good for cobweb.
Some have used salt paste to slow down undesirables, but there is no beating green mold.

Ya i tossed it. Can you use bleach to kill mold? I thought i read that bleach doesn't harm myc? Maybe im remembering wrong?

Few pics of the progress. My sawdust/bran blocks are beginning to pin. This is by far the fuzziest myc i have seen! Its from spores i collected from a wild grey. It looks like cotton balls on top of the block. There is also a agar dish with gold oyster that started fruiting in the incubator.
    
 Oh and some king pins. Second flush of my first ever straw bags with kings. I threw the other one out because of the contamination

Ya love kings. I did a vegan dish the other day with them as the "meat" feature. It was espresso,chili and cinnamon rubbed oyster mushroom over a chipotle chickpea puree, saute green beans with sofrito, and a toasted almond chimicherri foam. I could eat those kings all night!

So i put together this incubation room today. Believe me i know im not a carpenter by any stretch of the imagination. But had some scraps and bought some black 6 mil sheeting and an oil radiator heater. Here's what i came up with.
      Should hold about 30 buckets plus grain and agar

So if i keep them in the bottom level of the fruiting area this will have higher CO2 levels and be "darker" as far as the penetration of the lights go? This seems to be common practice in post of people growing multiple species in the same space.

And the new incubation room is sooooo nice. Keeping a steady 75-77F has definitely increased colonization times. Things are truly growing at a very impressive pace.

Today i inoculate my first golden oysters onto straw!

So i took a little time and many failures, but i have finally managed to have success with bulk grain spawn production using filter bags, 1/2 gallon jars, and quart jars. I have also isolated a rather vigorous pearl oyster(I think, i lost track of its origins in my more amature experiments) and king oyster. Along with a commercially bought grey oyster from field and forest. Im going to focus on these three for the time being.
   
Here are some centrally inoculated jars of kings i have colonizing

Here is a oak pellet bag of what i think are pearl oysters. The strain i have isolated and now have growing in bulk on straw. If anyone could help me positively ID these i would greatly appreciate it. Ill probably post a few pics in the hunting and id portion also.This one bouquet was just over 8oz.
  
Not much to show in the FC right now but in the next few days i will be moving my first few bags in. Each bag is about 20# of pasteurized straw inoculated with a 1:10 ratio of spawn, so 2#'s, roughly 2 qts of spawn each. There is a total of 170# of total substrate colonizing right now so hopefully, if all goes smooth, will have my first yield big enough to potentially sell. Fingers crossed!

Nice looking, Chef! You've made quite a lot of changes since I checked in last, and looking impressive. Those pearl oysters look like they form nice tight little clusters. How do you go about packing those bags of bulk substrate, which I'm guessing is chopped wheat straw?

I do them all at work and just do it on top of a clean sheet tray on the floor. Nothing fancy. If i keep it up i may come up with some sort of portable table with a bag holding hole. But i have a big bin i portion out 20# of straw and then mix the spawn into, then pack. I like the mixed spawn much better than layering. Hopefully soon ill have some pics of my first cropping.

So my king oyster bags were packed on 4-4-12, no today, 4-11-12, they look colonized. Could this be right? I have never had anything colonize this fast. It is a strain i isolated from a spore print from commercially bought mushrooms from my work. The bags are 20# cooked straw with 2# grain spawn, soaked for 2 hours then pasteurized for 90 minutes. NO lime or gypsum. They are defiantly much more colonized than the pearl oysters. What do you think? Put them into fruiting? Waite? Are they not fully colonized yet?

My dad and I are converting the other side of our horse barn into a greenhouse. Waiting for summer temps and humidity, then I can just run automisters and there are fluoro tubes already mounted in there. Keep the horse barn doors open for constant fae should be good I'll be making my first logs then!!
What did you use to make your logs? Polytube? and how big are they in diameter and height?

It is 14" lay flat 6 mil poly tubing from uline. I think the 6 mil is a bit excessive and would probably try 4 next time. But it dose let you tug on it a lot while packing without tearing,so i guess thats a plus. They are weighed to 20# per bag but i haven't measures the length. Would guess about 2.5-3'. The shorter ones are the remains of each straw batch which is why they are less than the others, and spawned accordingly. This was my first time cooking a whole 30# bale of straw, its a lot more than it looks. Plus i didnt really know the hydrated weight. So now that i have a good idea of the hydrated weight i can produce spawn accordingly. Just need to get my colonization times and fruiting times down now. Wish me luck!

Anyone else think the above bags of king oyster are ready to fruit? Tonight they have thick patches of myc in some spots and look colonized all over. I haven't really fruited kings in a log like this but sure seems colonized to me. I also have read that some people like to let there kings sit colonized for a while before fruiting in order to gather and use more nutrients. Thoughts?

Lol right, I am amazed at how after chopping up a bale, I can fill 3 GIANT black trashbags so big they wont fit in the doorway LOL. It sure breaks up to a whole lot!!!
I bought 5 bales for 10$. More fucking straw then I know what to do with haha.
I just got a 55 gallon drum and another one on the way for free from someone who was getting rid of them. Gonna set up a nice pasteurization container with them over propane torches, that way I can do full bails at a time.
Do you pastuerize it in bail form then chop? or chop then pastuerize when doing the whole bail?
I was thinking of wrapping it up in an old sheet after chopping like a bigger version of what I do with pillow cases, but I don't think it will all fit in the drum after being shredded and it expands?

Ya i chopped it up with a chain saw. Kept it tied and trimmed it down to the two strings then worked the center trying to keep it tied as long as i could to get it shredded as small as possible. Would up with an average of about 4" long pieces. It packs into our large kettles much better chopped. I cant fit a whole bale in either kettle there only 40 gallons each, nut i can split it between the two. They are bottom draining stock kettles so i just cook at night, drain and pack the next day. I think if i remember right the weight increases 6 times hydrated so one # dry = 6 # wet roughly.

Good to know. I use the chainsaw tek myself lol. The husqvarna is a little overkill though!! lol

Ya i know the kings in the bucket are not quite rite, they were one of my first bucket projects with a multispore culture that never really worked out well but fruited anyway. Ive got a stand in the local farmers market this saturday so hopefully i have a good turn crop to bring. I have the two grey oysters fruiting plus a few outside so ill at least have enough to feel things out.

Thanks mike! Ya im really trying to get it as productive as possible with the space and material i have. I have a wish list a mile long of upgrades and what ifs i am slowly working at. But as this is still a hobby and have not yet made my first $$$, things are slow going. But all i can do is keep going and hopefully im up and running with profits to speak of.

Thank you sir! The market is in a upscale shopping center and has two nicer restaurants. One of which i know the chef and hope to work out something to where they buy off what i dont sell at the market days. If not i have a few other restaurants in mind also. Fingers crossed all my conditions are right and i get a good flush.

Success at the market! Sold out in 1.5 hrs. Bitter sweet. Had tons of people asking for more after i was out. I brought 4.25# and sold 4oz bags for $4 each. Ya thats $16 a lb! Next week i should have three times that to sell. Man this is fun!

Don't the Oys sweat in those bags?
Depending on the nature of the market, be aware that you can't always extrapolate from the first few markets. There is a certain "novelty factor" and once this wears off sales can dip. Then they climb again as you build your core of customers that buys from you every market and then spreads the word.

The bags do condensate but i used a three hole punch on both sides of the gussets thus giving me 12 1/4" or so holes all around the bag, pretty clever i must say. I think this allows for a good humidity retention for storage. At least that is what i sold the customers on. There is also a 4"x4" piece of white cardboard on the bottom to help them sit flat and also a bit of moisture absorption.
I do get the novelty idea, must people originally stopped by just because of how the one sample oyster i had on display looked. But then i reeled them in with my sales pitch. Plus i wore my chefs uniform and gave out recipe packets and basic information, they really liked that. For now im only doing the per day rate of $15. This way if i have a really busy week at work and cant keep up with production i dont have to go to market.
If nothing else its a good learning experience and i enjoy making money, even if it is only enough for a tank of gas

That's a very good idea on the hole punch - might steal that one!
I have also tried the bags with the white paper back and clear front, they were Ok but not (unfortunately) as good as the punnets.

Ya we use the bags at work for bagging and portioning frozen hors devours and the white cardboard squares for pastry work, so all free. I did look into the punnets you mentioned somewhere else, solarity, but for now free supplies works while im still sorting out and gaining experience. Someone at the market called the bags "crafty" i guess thats appealing.
Ya JD just order a cheap chefs uniform or ill trade you one for a good culture and with your knowledge of mushrooms they will be eating out of your hand!

Ive heard foragers get good money for wild enoki. They are this color in nature and are getting light. They usually grow in cluster like oysters more so than the commercially grown elongated enoki everyone thinks of. Here is a pic.
 Last time i cooked them it was in a thai curry. They had a great chew, now overly so, just enough to sand up to 10 min of cooking in a curry broth.

Ya its still a bit amature/ghetto but once i actually start making a bit of money hopefully i can make a few improvements. But ya super excited to see things doing well and i finally have a decent production schedule and pace.

how are those bags vented during the spawn run? or are you making holes upon inoculation with grain?

Ya right after i pack them i cut small X's about every 4". I tried once just cutting them on 3/4 around the bag to only get top and side fruiting but then realized that the bags were going anaerobic and becoming bacteria filled on the bottom side with no holes. So now they get holes all the way around, and if some pop out the bottom then so be it, they usually grow just the same through the cracks in the shelves.

hello Chefin I've been lurking your threads for a bit now figured I ought to say goodwork man  reading all of this gives me inspiration I've also have worked in restaraunts all my life not a certified chef but experience counts
I've been dreaming for a few years of owning my restaraunt brewhouse with an established garden and house grown mushies, butcher meat and compost everything all in one sustainable place
I find it very refreshing knowing people are out there with similar ideas you are farther along then me thats for sure
keep up the great work man

The enoki just before i harvested a few tonight. They never developed there "velvet foot" but look delicious! Ill let you know how they taste.

So i ran into some high CO2 issues with the whole green house full for the first time. It was certainly a thought in the back of my mind, but until i saw its effects on a bag of pearl oyster, long stem small thin cap, did i realize i had a serious problem. Especially with two 20# bags of grey oysters getting ready to fruit and the market coming up. So i went out and bought a 250CFM duct fan and ran some new intake ducts, along with the two 180mm computer fans i already had.
  Thats the duct fan in that piece of duct. Worked out well. I have it constantly running. I had to adjust the run time on the humidifiers, but all worked out in the end. Went to the farmers market today with my biggest harvest yet, 10.5#. Sold out in 2 hours! Aiming for 20# next saturday. Here is what the adjusted FAE produced.
    Then there was also this monster a 8oz king oyster. First thing i sold today.
   All in all a good week. Really glad i remedied the CO2 situation when i did or i would of probably not been so happy right about now.

Did i miss how you prep those large quantities of substrate? Also, how big is the space they are all colonising in? Actually, just how many bags have you got colonising at any one time?

@NSF-I prep the straw, well everything in the kitchen i work in. We have a 40 or 50 gallon steam jacket kettle we use to make large quantities of stock in, that i cook my straw. I can get about 1/3 of a bail in it at a time. Next to it we have a 40 gallon tilt skillet i also use, again around 1/3 a bail fits. I to all my PC-ing there also, and all my sawdust blocks. I do my sterile glove box work at home. I am working with 3 different oyster species. Grey, pearl, and king. I keep a 10# rotation of spawn for each, 1# being the grain master the other 9 going to spawn the bulk sub. I usually do 2 20# straw bags and 2 5# sawdust blocks with each species. So i usually have 6 20# straw bags and 6 5# blocks colonizing at a time. Though i just started this, and with my current situation of waiting for a second flush of my current fruiting bags, im not sure if i quite have my production timing down yet. Im thinking it is going to be a mistake to wait for a second flush as it seems to be less dependable to fruit, time wise, as a first flush is. My market being on the same day every week and not yet having another outlet for distribution, timing is a key element in my production. I think i have pics of my colonization room back in this thread somewhere. Not huge, just enough for grain and bulk, with some dishes.

@evolveH20- I have my enoki block in my GH where it gets constant FAE and 12/12 light. It is on the side where it is a bit more CO2 heavy, but not by much. Mine is a wild culture so it doesn't have the selected genetics of commercial strains to grow long and skinny. From my understanding you want higher CO2 to achieve this. But you will get thicker meatier fruits if you give them more FAE and light, which in my opinion is preferable. Good luck!

Hey chef, I would agree with your thinking on first flush vs. second flush. If you're getting a decent yield off of your first flush, and your fruiting space is limited, it makes more sense to do one flush and done. That way you're maximizing your fruiting space with first flush bags instead of waiting around for a second (and usually) weaker flush. That's been my experience so far.

Ya i am just now getting my scond flush in from the gery bags i was talking about. Thats narly 2 weeks after the first. Unless this matches the first flush i dont think im going to sacrafic th spaace. As long as i get 20% yield on my first flush, im meting my financial goal and space is a high comodity. Tomorrow in expanding my fruiting area to about twic the size. Then the colonization area. Im looking into humidification methods bsides the humidifiers i run now. Probably going to go with pond foggers in 5 gallon buckts. But im open to suggestions.

So here is what i came up with. The original size was 6'wide, 4'deep, and 6.5' tall. The upgrade is 8'wide,6'deep, and 6.5' tall. This new space is awesome!!! Much cleaner looking. Still not truly professional, but not bad. It is made of a PVC frame, 1/2' foil backed foam insulation, aluminum tape, and my favorite gorilla tape. I also bought a 540(i think, not going down to check right now) CFM 6 in fan. I use this as my intake. Then i use the 250 CFM duct fan as my exaust. Both draw and vent out the basement window. I added 3 new hanging chains, and now have room for a few more shelves. I still have my humidifiers set up for now, but plan on setting up a 27 gallon tote with pond fogger and run my intake fan to pull in the humidity from this externally from the space.
So here is what i started with:
   
Then the new expanded frame and new wall material. Light but durable and MUCH easier to clean.
   After the frame was up, i attached the foam sheets to the INSIDE of the frame. Two reasons, one being a seamless skin on the inside for cleaning and the other being the ease of PVC to be penetrated by moisture and mold.
   After the foam was attached, cut, and secure, i seamed the joints on the inside with extreme weather aluminum foil duct tape. Best stuff ever! A little tricky at first, but after that, very awesome stuff.
   All the "windows" were the same material, asitate plastic. The drain was a pretty clever idea. I noticed on my old setup that the water that would leak out of the greenhouse would follow the cord covers i had down to protect all my power cords. So it hit me, why not use this to guide the water to the floor drain.
 So i have it inside the greenhouse a few inches, then run it about 10 feet over to the floor drain. Works GREAT! After i finally got done, day and a half later, i got all my sub back in. I lost some of the fruits but all in all nothing to severe.
     Then there is the new FAE system. Should get the job done. Like i said, just the temporary setup. This thing really cranks.
  So ya, much happier with this. Cant wait to see how things produce and what my production can increase to. Well thats all for now.

Nice upgrade. Keep tweaking things till you get your desired results.
If you can clean up and straighten your intake ducting you'll improve efficiency; if you can go with straight duct, do it. Flexible ducting should only be used if it has to as its ribs decrease air flow.

Ya im definitely loving the new space. FAE is excellent and just being able to move around inside is soooooo nice. I think im going to meet my goal of 20# for this weekends farmers market! At $16 a lb. makes me very happy.

The biggest help has been having two different recipes to hand out. It helps those people who are on the fence about mushrooms or just dont really know what to do with them but like them. I have also been bringing a sawdust block with me that has mushrooms growing that i keep under a glass dome on a cake stand to show people how they grow along with pictures of the basement, basically a mix of what i have posted on this thread. I brought 20# last weekend and sold 19.5#. Not to bad at $16/lb. I profit $14.18/lb on saw dust and $14.42 on straw so it has been a good little boost to the house hold. If i wasn't working 50-60 hrs a week at my main job i could probably really start cranking them out. Ive got my first appointment with a near by upscale restaurant to see if there interested in buying. My phoenix and pink culture should arrive any day so will be changing over to warm weather for the summer.

I have had a few people ask if i could sell them larger quantities because they were vegetarians or vegans but i always break up everything into 1/4# portions and have had no complaints. Some of my return customers even buy two or three bags now with no hesitation on price. I also write out all my recipes with 4oz. of mushroom as the base proportion to the rest of the ingredients. And sell all the herbs and a few seasonal vegetables from the garden in the recipe as well to up sell the mushrooms.
I got the bags from here http://www.mrtakeoutbags.com/ I think they came out to $.13 each. I punch a few holes in them on the top to tie the raffia and let a bit of extra moisture out. They are wax lined to they dont soak through.

Just the cement. I have a rubber channel that protrudes just slightly into the green house and leads out to the floor drain. The floor stays moist but not sopping. Once a week i spray diluted bleach on the walls and floor and just wipe it down with a old bath towel. The water helps a bit with holding the humidity. I have things fine tuned enough with the 5 disc humidifier on the minute adjustable timer and the intake/exhaust fan on a fan speed controller. Things stay at 97-99% humidity without being dripping wet. The large water reservoir the fogger stays in, being in a cool basement and filled with cold tap water helps condition the incoming air. Today here in STL reached 90F and with drawing in 100% of my air from outside, the temperature in the GH only reached 73F. Still not cool enough to continue growing my greys and pearls, but should be perfect for pink and phoenix. Though i am still getting my greys and pearls to pin and grow, they get a bit thin.

Over 14 types of fruit, seasonal vegetables, chickens, all in a 60'x40' suburban back yard The basic premise of micro farming i would apply to my future restaurant, along with an aquaponic greenhouse and mushroom house. Just curious, I see you have ductwork bringing fresh air in from outside. Are you pipeing the spent air and spores outside as well or did I just overlook that part?
