Vegetarian Green Coconut Curry! just thought I would upload these photos for now, after I indulge I'll write out the recipe. ended up being one of the most delicious green curries I've made in some time.!

a pinch; netmeg paprika onion/garlic powder a splash; fish sauce
blend that all togther all awesome like, then get some oil hot in a sauce pan or pot; add your paste, cook that a bit, add a nice chunk of lemongrass/ginger/galanga. Finely dice; onions/garlic/green pepper/carrots/tomato, saute that in the paste for a bit. Add a bay leaf. Once that is all cooked and looking sexy, add a serious splash of rice wine. Reduce that for a bit, add a touch of soy sauce/fish sauce. Add your coconut milk, I used about a quart, a tiny splash of more fish sauce, also a cup or so of vegetable broth. I bought some delicious roasted coconut juice to drink, but I ended up putting most of it in my sauce/soup, it is rather sweet and comes with chunks of delicious roasted coconut. So I suggest if anyone can acquire some, its pretty cheap at asian stores, or you could just buy some roasted coconut water and add diced up roasted coconut yourself. You'll want to begin tasting things now, as the coconut milk reduces and things come together you'll want to season things accordingly. May need a bit more milk, or perhaps a lil brown sugar if you need some sweetness. It may end up being really spicy at this point but as things cook down and the coconut milk does its thing it should settle down quite nicely. Once its reduced, add your water chestnuts, scallions, thai basil, cilantro, red chillies, squirt some lime juice, and finish it with some coconut cream. Cook that down a bit for a minute, boil some water add a big chunk of fresh ginger, lemongrass, and salt. Boil your noodles, dice your garnishments, you could saute your squash/zuicini and put it in right now, but I left mine out to put ontop! and then serve!

Man, impressive that you made the base for the curry from scratch.
I'd love to try to make a curry like this for once without being lazy and just using curry paste. ;P

yeah man I've bought curry pastes before, there really isnt anything wrong with most of them, for the most part they are fairly delicious. But in all honesty they are incredibly easy to make, and you can make them according to what you enjoy. Like I like mine with lots of lemongrass/kaffir lime. You could also roast the lemongrass/garlic/shallots/ginger/galanga/limes to give it a nice heartyness.
