I would like a funeral pyre. Not out on a boat like the other guy, but a pyre nonetheless.
Then my ashes will be free to blow in the wind and spread themselves.
If you want an open casket you should consider the extra cost of getting you all fancied up. With a closed casket, you could potentially just have your dead body tossed in there with no prep. Money save.

I'd be cremated. It seems like such a waste to make a nice coffin out of wood and metal and velvet and stuff, only to throw it in the ground the day its being used. I really like OfflineMorphinTime's idea of cremation

Why though? The maggots will get to have lots of baby maggots and have fulfilled maggot lives. Then the maggots will die and they too will be consumed.
