Kimchee, The Making of

So I'm trying my hand at Kimchee.  Basically what I did:
Chopped into napa cabbage bite sized pieces removing the hard heart
soaked in enough water to cover with salt added (about a cup)
after a hour or so I drained lightly
packed into mason jars
added a salty mix of my favorite hot sauce red pepper flake, and roasted garlic finely diced to top it off

I will update in about 2-3 weeks when it is "done."

Any of you make kimchee?  If so I would appreciate any advice.

ive wanted to try kimche since i had a  kim che flavor  mr noodles once

Yeah, I love kimchee in ramen, and just about everything else.  But I don't like to pay out the ass for a small jar of "hot" kimchee which isn't that good.  The napa cabbage costed me about 4 bucks and filled 2 wide mouth quart jars.  Which about 3 times as much as I would get at the store.

I'm getting ready to plant some bok choi and nappa cabbage, I took my kids to
a korean BBQ place in atlanta a few months ago, they liked the kimchee so
I'll be making a bit myself in a few months. I'm using them as landscaping, I
planted a red okra which looks quite nice being planted so densely, you'd
think it was an ornamental plant... the coloration is like swiss chard

and take it from a korean, you want to add salted shrimp to your brine.  The funkyness element in the pickling is key.

I was actually looking at some fish/anchovie sauce from Indochina for kimchi (I suppose I'll spell it like everyone else) to add some funk.  But next time I'll pick some up.

I do my kimchi almost exactly like Geokills.  There's another type of kim chi you might also want to try called Dongchimi.  Take a couple korean radishes and quarter, two jalapenos halved, a bunch of green onions, an asian pear halved, 4 whole cloves of garlic, some salt, and some sugar, and stick it in sterile jars and fill it up with water.  Let it ferment for 3-4 days like kimchi, and then stick in the fridge.

You can make a really tasty dish called Dongchimi Gooksu by serving it cold with somen noodles (vermicelli if you can't find somen) and lots of the broth.
