Pickling with a Pressure Canner?

Just curious on how to pickle with a pressure canner. I've been searching all over the internet and all I can find are guides to quick pickling and such. Do you prepare your cucumbers and veggies differently if you're going to PC them instead of just pour hot brine in them?

So should I still do a pre-cook of the cucumbers? Also, with pickling garlic, should I do a preboil or will it make them mushy?

I had no clue you were precooking, dont with the PC, the pressure/steam will do all that work

Okay I didn't precook, I was just reading the wrong recipes. I did overPC them, did them at 15PSI for 25minutes about. Next time I'll do 15 minutes?

ok, just remember- they are pickles and you want them to be at least a little crunchy. the best whole dills i ever made was by dumping the boiling brine over the pickles in a sparged jar with sprigs of mature dill, then finishing them in the oven at 250f till the lids popped down.
thousands of grammas cant be wrong...

My grannie did the hot water bath, but I figure the PC is a little easier, I just did my PC too long and shrivelled them. This time I'll do less presure and time.

Don't precook them. You want them crunchy not soggy and mushy (I assume :P)
Veggies are the same as cucumbers

Second attempt came out well. I heard if I let the brine cool first, then fill the jars, and waterbath, it'll keep them crisper?

dood yeah wonderful looking jars of deliciousness going on right there. When we make pickles we do just that, heat up brine let cool a bit, then hotbath. They are always crunchy and nomnom. But I like the idea of squash, grapeleaves etc.. Good thing we haven't begun our jaring sessions!

I am eating a pickle. They turned out fantastic. The only thing I have to say is a lot of recipes suggest a recipe for brine of 2qt water, 1qt white vinegar, and 1cup salt. I suggest changing the salt to 2/3rd cup, it seems to taste better, and the vinegar is what preserves the pickles, not the salt, so your salt content can vary.
Habaneros along with pickles == a fantastic idea, I made pickle spears and threw in a sliced in half habanero, perfect heat.

Hi, I am brand new to this site. I was looking for directions on how to pressure can pickles, and ran across this. I am wondering why I can't see your pictures. What recipe for pressure canning pickles did you use. I love the idea of including the peppers. I love a little bite with everything.
