Early pinning (pics)

So, hypothetically, a couple of the jars have in vitro pins forming, and it looks like the jars are 90% colonized or so after 5 weeks.  The bottoms are completely done; there's just a bit left on the sides.  It looks like the mycelium has grown through the center of the cake and is emerging on the other side.  In one week I'll be leaving on a one-week vacation.  I have three options:

1) Wash off uncolonized parts, dunk, birth now

2) Wait one week, dunk, birth right before leaving for vacation (I'm using the chronic tek, so I can just leave them)

3) Wait two weeks, dunk, birth right after vacation.

I think they started pinning early because the ac broke, temp rose from 76 to ~81, and now has fallen back to 76 since the ac is now working.  I read that sometimes early pinning is a sign of contamination, but what option would you guys recommend?  I think I'd like to wait a bit longer to let the mycelium consolidate, so I'm leaning toward 2).

The pins are growing rapidly, and there is knotting all over the cakes. I would like to birth after 100% colonization is reached or when the shrooms look like they are going to rot.

Sorry the pics suck.  I see some blue-green discoloration in the first one, but I think (hope) it's just bruising.

3, they will dry out if you put them in to fruit and aren't spraying them.....

Another question:

What should I do with this jar?  I suspect bacterial contamination (jar has been quarantined).  Well, either that, or the rise and fall of temp when the AC broke, or a combination of these factors. 

You can see that the jar is not nearly 100%.  Also note the dark cap and stem of the fruit in the second pic; it looks to be rotting. 

Would you try to remove the fruits in a glovebox and put the cake back in the 1/2 pint and attempt to colonize the rest?  Or maybe fruit it in vitro?  Try to cut off the uncolonized chunk and birth it as a small cake?

I'm at a loss.

It's not rot, it's metabolites. It's just digesting bacteria. I think it's kind of a given that it will do that, just sometimes more than others.

I think you should just leave them in there too. Eventually the mushroom will start growing myc off of it and help colonize the rest. In 2 weeks if it hasn't changed, you can wash it off. You can outline the myc growth in sharpie/pen.

Thanks for the words of wisdom.

Taking that cake out, picking the fruits, and replacing it in the jar would be quite a trick without contaminating it.

What?  Are you saying you think it's contaminated?  I'd be left with less than half the cake if I tried to fruit it.

Just fruit as you normally would. I just harvested a 45 gram mushie that was an invitro.

^ Yeah, these two are going crazy in vitro.  Hopefully when I get back in a week I'll have one jar 100%, plus these two fruiting in vitro.
