Go to lowes, and in the lighting fixture area find the 2'x4' white plastic grates that are used to protect fluorescent lightin fixtures. Then build yourself a shelved frame similar to your idea, but put two box fans laying across the top blowing down. As many shelves as you wanna build in.. plus you can rotate them, good for mass quan.

Dont shove TOO much into one area. They need fresh air, the more tubs you have, the less fresh air in the room.

Then there is no limit! I want to see some good genetics in there, all of them popping up at once!
What I do is order a 4 pack from sporeworks, then they throw in a free strain, 5 strains. Try 1 quart of each (or a batch). Find one that works best. I saw you said you have some working though, so you may already be ahead of that. Texas has worked well for me.

Rotate them 90% so the polyfill holes on the other side aren't up against a wall, will help with air flow. While it looks like you have a fairly clean room you may want to raise the bottom off the ground to avoid contams near the floor and also for the fact that CO2 will settle towards the floor as well, meaning less O2 for them.
As for large scale drying, you can get multiple food dehydrators or make a large fan based dryer out of a wire rack. Basically get a wire rack/shelving that is roughly 2x2 ft which is about the size of a box fan, get a box fan, and get some replacement window screen, and some plastic sheeting. Put a box fan on the top shelf facing down, shrooms on screens on each shelf, and wrap the entire thing in plastic wrap (just the sides leaving a small gap at the bottom). It basically makes a wind tunnel that vents out the bottom. Works well for predrying.

That's funny, were literally in the same boat bro, I got about 9 tubs right now from 36 jars, expanding also as I'm moving into a house with a spare bedroom 
I'm also using b+ for most of my tubs, but my genetics are good and I have about 6 different strains, haven't even used a few syringes as I want to save them for the house, and this is also my college fund!
Also, my product all goes to one person too, that's the only way to do it man, don't be dealing with all the kiddies who want 8ths, let someone else waste their time with that while you make jars.

 CO2 doesnt separate in or out of the air, it can only increase the % of CO2 present in our air mixture that we breath, it doesnt get heavy and sink/lower or separate or we would all suffocate on the surface of this planet. 
+plus dude has a fan in the room that is way more than enough to mix/stir up the air in the room. 
still getting them off the floor is always a good idea.

Floors are bleached in between flushes...
It was a  grow room, so its quite dirty still...

No it won't seperate out of the air but if you have a closed room (without a fan) and you have something constantly consuming O2 and expelling CO2 you will have a higher concentration of CO2 at ground level. Depending on how often you open the door and have the fan running it will probably be negligible.
