Question about lamb.

I just picked some shoulder chops up and I'm out of fresh mint leaves, I have some kind of peppermint syrup shit in my cupboard, would it do me well to drizzle a  little bit over the lamb and marinade for a few hours?  I'm going to rub it down with some garlic powder, thyme, and all before grilling but I'd hate to waste lamb if this peppermint syrup's just going to fuck it up.

I guess it depends a bit on the peppermint syrup; I certainly wouldn't overdo it, especially if you are going to marinate it for several hours. Plus, peppermint is one of those things that seem to be a bit unstable: it doesn't respond well to a lot of processing, in my experience.

I went ahead and did it anyway about 30 minutes ago.  I just drizzled a bit on  inside of a chinese food plastic thing and shook it up.  I'm only marinading for about an hour so before it hits the grill.  It smells good, it just might work.

I would have done it after cooking as suger will burn..
