Watermelon Wine, I want advice Pleaze

I would like to make about ten gallons and let it sit forever, poor it off siphon it rack it and everything but I dont know what to do. I read about it but I like hearing what you did. I want to make enough to drink and enjoy and also let it sit for a year so every year i can drink a gallon for ten years and test whats up.

Get like ten melons. Cut a cork size hole in the top and put your yeast in and plug it back up, In three months put a spicket in the side and pour your drink. No dead seriously it works like that. Watch out for seeds though.

Can't tell if your joking but that most certainly will not work.
Here's a recipe from HBT (homebrewtalk)
4-5 gallons of fresh juice (was 6 gallons worth of chunks that we boiled down) 18 lbs white sugar 5 tsp acid blend 5 tsp nutrient Champagne yeast
OG: 1.16

Make sure you don't cut the meat too close to the rind. I tried to make it once and it came out tasting like rind. Ended up running it through the still to get something drinkable. I may try again this year.

The esters that make up the flavor for watermelon are pretty delicate..... and wont survive fermentation....you will not get that much watermelon flavor in your finished product

8ozs Extra Dark Crystal Malt
8ozs Brown Sugar
1oz Colombus Hops @ 60 mins
1oz East Kent Goldings @ 15 mins
1oz Whitbred Golding Hops @ 5 mins
British Ale yeast
Ferment at 64F for two weeks.
14 years of brewing; the simple grain bills are the best!

So that's what happened to the batch I made, I thought I cut the meat too close to the rind. Oh well, I have a still that I run my botched attempts through whenever I screw them up.
