How-To make a delicious mushroom noodle soup 1

 I found some delicious mushroom broth I had made few months back in my freezer and figured I'd make something delicious. I have neglected this forum for some time and decided to share some delicious things. This is a great recipe to make, and mushroom broth is a wonderful thing to do with all those mushroom stems and other scraps you may have in your kitchen. Instead of throwing them out you can turn them into something rather spectacular! The broth is fairly straight forward, and is the key to this bowl of nom. It is as follows; 1qrt Shiitake Stems 1qrt Portobello Stems 1qrt Oyster Stems 1qrt White Button Stems 1qrt chopped onion 1/2qrt carrots 1/2qrt celery 1cup shallot 1garlic 1bay leaf 1grip of thyme leaves & stems 1grip of parsley stems 1/4/qrt chopped tomato Take the stems, clean thoroughly, as dirt is no beuno. Rinse, and dry as well as you can. Try to avoid any gills, get a big bowl, lather the stems,onion(halved),shallots(qua rtered), in olive oil, salt, pepper. Roast till they begin to look and smell wonderful. Place in your stock pot, add the remaining ingredients, and enough water to cover it and then a bit more. Bring it up to a simmer and let it cook on real low for all afternoon, and then some. Make sure to taste it right away, and to taste it ever 30min or so, things will come together like magic. Salt and pepper can be applied at this time.
Once your broth is superb, you can go ahead and get your udon noodles(homemade or store bought),. In a sauce pan, add some oil in the pan, add a lil onion/garlic powder, minced garlic, and scallions(white part). Cook real quickly, add your broth. Heat, add your udons, add scallions(green part), parsley leaves, chives, course cracked smoked black pepper. Thats about it hey. One could add mushrooms and other things, but I like to keep it really simple, if the broth is made right itll be packed full of flavor and really earthy and wonderful! Enjoy!

Sounds great, when I saw the thread though, I thought it would be about powdering up some dry mushrooms and incorporating the powdered mushroom into some home made noodles.
