Frozen mushrooms turned black?? Are they safe?
    #13530431 - 11/23/10 05:11 PM (3 years, 7 months ago)

Hey guys, I've asked in several forums with no response at all:/ I've also searched threads without much luck. I just went and picked some cyans that were frozen from the weather last night, after thawing most turned black and kinda floppy. They also give off a very strong "cooked mushroom" smell unlike any of the others. Also, some other ones I picked a few days ago have turned real dark brown/black after drying (smell normal.) Is this normal(maybe bruising?) And are they safe for consumption?

Thanks
  :hook:  :headbang:  :headbanger:   :peace:  :poison:

Not worth it.

It's hard to tell, but fresh mushrooms that get frozen tend to rot easily and getting ill from rotting <anything> is a horrible way to spend a day (or two).

That's kinda what I was thinking:( They seemed a lot more rotten then bruised:/

Waht about the ones I picked before the freeze. "brownish/black and smell ok?"

Well pictures of them would help a lot.
I would not eat the ones you picked that were frozen to begin with. That's what happens when they freeze, the cell walls expand when they thaw and they get all goopy and nasty.

As for the other ones...how "brownish black" are they? If they're jet black and look disgusting, I'd throw them out.
They probably wouldn't do any REAL harm, but could likely cause some serious stomach discomfort, and if I'm trippin balls I don't want to be worrying about my fucked up stomach the whole time.

Almost. The liquid in the cells expands and bursts the cell walls upon freezing. Try freezing a sealed glass bottle completely filled with liquid and see what happens.
That's why you never freeze fresh mushrooms. That said, you can still use them to make tea if they haven't started to rot.

Ah, thanks for the accurate explanation

Here are some pics, hopefully that helps. Very dark down here in the basement, but you can be the judge....

This one has brown coloring. Smells fine, picked fresh, never frozen.

These seem pretty much black, smells fine, picked fresh, never frozen. (bad pic, sorry)

I picked these after the heavy freze last night, about 27 degrees. Ones on the left only have black around edge and have light mushroom smell.

And a close up of the real black ones. These smell like cooked mushrooms, very aromatic:/ Also, mushy.

Worst case, I will probably just get a upset stomach though? I'm gonna toss the super black mushy ones, and maybe make tea with the black ringed ones.

this is a good example right here, and I'm saving this photo

the ones on the left are savable but not the black ones on the right..That's bacteria much of the time when they get black like that, not just bruising

the ones on the left should still be dried as they are starting to turn, but I definitely would not eat those black ones fresh. Drying it completely should kill all that bacteria, but those black ones are probably gone

that's what I do anyway, toss the black ones on the right and save the left ones

BTW, it's  not just freezing that will do that. extended heatwaves like we get in SF do the same thing, because at some point the mycelium just gives up on the fruit and doesn't defend it anymore..that's when the bacteria attack it

and to answer 'worst case' if you eat the lack ones fresh...maybe a stomach ache, but I did this many years ago and tripped all night on the toilet..To this day I rarely eat fresh ones unless there are in very good condition
